There are many ways to process harvested green vegetables. Combining green vegetables with vermicelli is a favorite in my family.

Today I am staying at my in-laws' house because I brought organic green vegetables from my garden. I have a special task from my mother-in-law. My mother-in-law wants to eat vermicelli with mustard greens that I brought.
So, today I will cook for my mother-in-law and my siblings-in-law, and of course for my husband. My family and my husband's family really like the variety of vermicelli menus. Usually we will eat vermicelli for breakfast or dinner.

This time, I will make a vermicelli menu for dinner. This menu is indeed very easy to make. That is why this menu is also a favorite of many people in my country, especially children.
Although not in my own kitchen, I have no problem with that, because I have often used my mother-in-law's kitchen.

Of course, you can replace mustard greens with green vegetables that are available in your area, maybe spinach or kale.
THE INGREDIENTS

- 250 grams of rice noodles
- 150 grams of mustard greens
- 2 eggs
- 3 tbsp of sweet soy sauces
- 3 cloves of garlic, sliced
- 5 shallots, sliced
- 1 tomato, chopped
- 1 spring onion, sliced
- 3 bay leaves
- 1/2 tsp of salt
COOKING INSTRUCTIONS
PREPARE THE VARIETY NOODLES


Bring one liter of water to a boil, then add the rice noodles, and cook for five minutes.

Remove the rice noodles, then soak them in room temperature water or ice water. Let it sit until we are ready to saute the vermicelli.
PREPARE THE GREEN VEGETABLES

Clean the mustard greens, then cut them into smaller pieces so that they blend well into the vermicelli dish.
COOK THE GARLIC AND SHALLOTS

Preheat the vegetable oil. Then, add sliced garlic and sliced shallots, also bay leaves. Cook until fragrant.
ADD THE EGGS

Add two eggs. Then, make scrambled eggs with a quick stir so they don't burn on the bottom of the cooking pot.
COOK GREEN VEGETABLES AND TOMATOES


After the scrambled eggs are cooked, add the chopped green vegetables and chopped tomatoes. Also, add salt and sweet soy sauce. Then add a little water so the green vegetables cook faster. But don't add too much water so that the noodles don't become soupy. Then, cook for about 3-5 minutes depending on your taste.
ADD BOILED VERMICELLI

As the final step, add the boiled vermicelli, and the chopped spring onions. Keep stirring them until they are evenly mixed. Until the spices are absorbed into the vermicelli. Then, check the taste. If it's not salty enough, you can add a little more salt.
SERVING!

Serve the stir-fried vermicelli while it's warm. If it's cold, it will reduce the quality of the taste.
For this dinner, I also added sliced omelettes for an extra delicious taste!
