Sweet & Simple Scones: A Fun Birthday Recipe for My 13-Year-Old's Special Day!

Today my oldest daughter turned 13 and her birthday breakfast request was scones!

Every birthday I let the birthday boy or girl choose what they want for breakfast. Lately they've been requesting scones, so they are now a special birthday-only breakfast! It works for me! For the birthday boy or girl, they're served on our special plate, and their information is recorded on the box (since it washes off of the plate)!

We've had this plate for 9 years now and it's been a part of many birthday celebrations. My scone recipe was something I acquired during Covid. A library was offering a free baking class online and we baked scones together via Zoom. It was a pretty easy recipe and I always have the ingredients needed!

I used to only make one batch of the scones and split the extra 2 into thirds, but as the kids are getting older, I'm now making two batches. The kids like the chocolate chip ones the best. They taste like a big, fluffy chocolate chip cookie.

I also have started making blueberry ones if I have some available in the freezer. This method didn't work as well today as it normally does when I make two separate batches. Today I made a double batch and split it up. It didn't affect the taste, but it was more messy when mixing in the frozen blueberries.

Smash the dough into a disk shape.

Divide into 8 equal pieces. I'm thinking you could do more pieces, but this size is really good for a serving!

We ended up with 8 chocolate chip and 8 blueberry scones going into the oven. I wipe some cream on them and dust them with some sugar. After they bake, sometimes I make a simple frosting with powdered sugar and milk and spread it over them.

Oh me, oh my! They were really delicious and I did break my Keto fast to eat "pieces" of them today (which added up to at least 1.5 scones in total - Ha!). Yummy!

The blueberry one tasted like a fluffy blueberry muffin. I never complain when the kids request these for their birthday breakfast. They're not too difficult to make and taste delicious!
