Hello vegan lovers! It's devy and I'm back here after a while. On this occasion, I will share a recipe for making a unique desert. This dessert comes from a neighboring country, Thailand.This is the first time I made this food and wanted to share the recipe with all my hive friends. The name of the food is Bua Loy or better known as Pumpkin Thai desert. Coincidentally a few days ago I got a shipment of pumpkin from my hometown, so I decided to make Pumpkin Thai desert. Actually, I first saw this food on a social media post, but she did not include the amount of ingredients. Therefore, it was quite difficult for me to figure it out, and I just guessed. However, I managed to make it and wanted to share the recipe with you guys.

The Ingredients

  • Dough ingredients
    300 grams of yellow pumpkin
    400 grams glutinous rice flour
    4 tablespoons tapioca flour
    4 tablespoons sugar
    1/4 teaspoon salt
    2 pandan leaves

  • Coconut milk sauce ingredients
    200 milliliters of water
    100 gram packaged coconut milk
    15 tablespoons sugar
    1/4 teaspoon salt
    2 tablespoons tapioca flour
    2 pandan leaves

How to make Bua Loy

How to make pumpkin batter

• Peel the pumpkin, then remove the seeds and cut it into small pieces so that it is easy to cook when steamed.

• Boil water then steam the pumpkin for about fifteen minutes.

• After the pumpkin is cooked, remove and drain

• Mash the pumpkin using a fork. Set aside a small amount for the gravy mixture

• Combine the mashed pumpkin with all the batter ingredients except pandan and set aside two spoons of glutinous rice flour to make the pumpkin stalk batter.

• After the dough is smooth, make small rounds and then make a line motif on one side using a fork, make it look like a pumpkin

•Chop the pandan leaves and blend with a little water. Then strain to get the water

•Mix the set aside glutinous rice flour with the pandan water.

• After the dough is smooth, form a long shape resembling a pumpkin stalk. Then stick to the pumpkin dough

• Boil water with pandan leaves, then add pumpkin dough. Boil until the pumpkin is cooked and floats

• Drain the pumpkin and then put it in cold boiled water.

How to make coconut milk sauce

  • Add all ingredients except tapioca flour and stir well until boiling.

  • Add the mashed pumpkin that has been set aside and tapioca flour that has been dissolved with a little water and stir well then turn off the stove.

Finally, it's time to serve Bua Loy by arranging the pumpkin on a plate and then pouring the coconut milk sauce.
