When my siblings and I were kids, we really enjoyed eating unripe papaya because my mom would make two different dishes with it. The first one was pancit Bisaya. She would grate the papaya into thin strips until it had a texture similar to noodles, then sauté it and season it with soy sauce.
The second one was atsara. She would grate the papaya into the same noodle-like strips, then squeeze out the excess liquid. After that, she would boil the vinegar together with the spices and seasonings, let it cool a bit, and mix it with the papaya. It was really yummy!
