Let's Prepare Boiled Ripe Plantain With Veggie Sauce.

Hello welcome to my foodie corner. Lol. I hope you like food as much as I do. The mention of food gets me in the right mood. Hehehe.

Talking about liking food, what's your favorite plantain dish? For me it's unripe plantain and I love porridge plantain with enough veggies. Sometimes I add potato or beans to it. Yummy yum. ๐Ÿ˜‹

I bought some unripe plantain, hoping to prepare porridge with them but they got ripe before I could use them. So I decided to prepare them this way - boiled plantain with vegetable sauce.

So let's cook

Ingredients

  • 4 fingers of plantain.
  • 1 tablespoon of grounded dry pepper.
  • 1 tablespoon of salt.
  • ยฝ tablespoon of ehuru (African nutmeg).
  • 1 sizeable bulb of onion.
  • 20ml of vegetable oil.
  • 10 leaves of ugu (pumpkin vegetable), fresh from my garden.
  • Water.

Ehuru (African nutmeg) is a natural essential spice used in many dishes like soups, sauces and soups. It's aroma and flavor adds to the tasty goodness of these delicacies.

Procedure

  • First wash the plantain, cut in desired sizes. I prefer cooking them unpeeled.

  • Get your cooking pot, pour the cut plantain, add water, salt, cover the lid and allow to cook for about 15 - 20 minutes.

While it's cooking, prep other ingredients.

  • Wash and cut the vegetables.

  • Peel the onion, dice or slice.

Making the vegetable sauce

  • In a dry pot or pan, pre-heat the vegetable oil on medium heat for about 2 - 3 minutes.

  • Add a pinch of salt, onion, stir fry for a minute.

  • Add ehuru, pepper, more salt to taste, and stir fry for another 2 minutes.

  • Finally add the vegetable, stir fry for 5 minutes, then turn off the heat. I love my veggies fresh and crunchy.

  • By now, the plantains should be cooked. So drain the water, gently peel them, and serve on your favorite plate, garnished nicely with the sauce.

This meal tasted so nice that I couldn't get enough of it. It's nutritious and suitable for the old and young alike. And the kicker is that it's a great meal for breakfast or dinner. You can even pack it on the go as lunch.
