Hello, dear friends. In my home, food has always been a reason for celebration. It not only nourishes us but also strengthens family bonds; even when we’re feeling down, preparing and sharing a special dish helps lift our spirits. Likewise, every birthday, achievement, or significant milestone is celebrated around the table—whether with a homemade meal or something store-bought—creating wonderful family memories.

For my family, cooking is a way to share happiness; it represents love and commitment at the table, and allows us to enjoy the flavor and seasoning prepared by the cook.
With that in mind, over the last few weekends, I’ve been heading into the kitchen to prepare some unique dishes—a break from our usual, everyday routine. I wanted to share these recipes with you in case they serve as inspiration; I hope you enjoy them!

CORDON BLUE
CORDON BLEU
I took a chicken breast and stuffed it with cheese, ham, bacon, and vegetables like bell pepper and scallions. I tied it up with kitchen twine and seasoned it—in this case, I added some curry powder. I cooked it in an air fryer to cut down on the calories that come with traditional deep-frying. I served it alongside frozen potatoes and chopped zucchini—also cooked in the air fryer—as well as boiled plantains, which add that touch of sweetness we love so much in our home.

PINCHOS (O BROCHETAS)
SKEWERS (OR BROCHETTES)
We started making skewers at home because it’s faster and easier than hosting a full-scale barbecue. Plus, you can easily incorporate vegetables like bell peppers, onions, or zucchini. For this version, I threaded chicken onto wooden skewers, alternating it with the vegetables—though you could also add beef, chorizo, or sausages. Although I cooked them directly over a flame rather than over charcoal—as is traditional—I like to think of it as a mini, homemade grill setup.

HAMBURGUESAS TIPO SMASH
SMASH-STYLE BURGERS
I’d been craving burgers for days, so we took the opportunity to pick up the ingredients we’d need. When we were preparing some ground meat, we set aside a portion to form the burger patties. We kept things simple that day: we cooked the patties, added cheese, lettuce, and tomato, and I whipped up a pickle-based sauce that tasted remarkably like the one from McDonald’s—I absolutely loved it! We also used the air fryer to make some fries to go with the meal.

Saludos y feliz noche.
With these three simple ideas—which took less than an hour to prepare—we were able to shake up our routine, enjoy a delicious homemade meal, and, most importantly, share time at the table with my mom. I hope you enjoy this post. Best wishes, and have a wonderful evening!
