Saludos, amigos amantes del rico y variado sazón. 💁☀️

A Tuesday of Culinary Delight with Fish in Sauce, Rice and Beans, and Golden Yuca Cakes
Greetings, friends who love delicious and varied home cooking. 💁☀️
Happy Tuesday, everyone!
In the past, canned fish used to be my first choice because I was hesitant to buy fresh fish due to the work involved in preparing it. However, I discovered a more practical way to cook it that changed how I enjoy this food.
Today, I prepared delicious fish slices in sauce, accompanied by yuca cakes and rice with beans. These three dishes came together to make Tuesday's lunch.
I invite you to join me and discover the recipes behind this wholesome menu. Let's get started!

✨General ingredients for two servings

- Rice: 1½ cups.
- Fresh fish: 1 pound.
- Yuca (cassava): 3 medium-sized pieces.
- Beans: ¾ cup.
- Olive oil: 8 tablespoons.
- Lemon juice: 2 tablespoons.
- Tomato paste: 2 tablespoons.
- Mixed seasonings: 1 head of garlic distributed among the different preparations, ¼ tablespoon ground cumin, ¼ tablespoon turmeric, and 1 sweet pepper.
- Salt: ⅚ tablespoon.
- Water: enough for the different cooking stages.
✨Fish in sauce

I began by cleaning the fish. Although it had already been gutted, it still had its head, tail, and scaly skin. First, I removed the head and tail. Then, by making cuts along the upper part near the dorsal fin, I was able to remove the skin and scales together, saving myself the work of scaling the fish. Afterward, I washed it thoroughly with plenty of water and cut it into slices.
Once the fish was cleaned and sliced, I placed it in a bowl and seasoned it with ¼ tablespoon of salt, 2 tablespoons of lemon juice, and peeled and crushed garlic. I let it rest for approximately one hour so it could absorb the marinade.
After that time, I placed a pressure cooker over the heat with 2 tablespoons of olive oil, 2 tablespoons of tomato paste, and 2 cloves of garlic. I began sautéing these ingredients and then added ½ cup of water, one crushed sweet pepper, and ¼ tablespoon of turmeric. I let the sauce simmer for one minute.
Next, I added the fish slices along with their marinade and made sure the liquid covered them. I closed the pressure cooker and let everything cook for 35 minutes, hoping to soften the fish bones. In the end, they softened only a little.
When I opened the cooker, I was greeted by a surprising aroma, and the fish slices were well coated in an appetizing sauce with reddish and yellowish tones.
✨Rice with beans

The second dish I prepared was rice with beans. I took the ¾ cup of beans, checked them, measured them, and rinsed them thoroughly with plenty of water. Then, I placed them in the pressure cooker with 2 cups of water and 1 tablespoon of olive oil. I cooked them for 30 minutes. By the end of that time, the beans were tender, so I set them aside while preparing the remaining ingredients.
Next, I measured 1½ cups of rice, checked it, and washed it well. I also peeled and crushed 3 cloves of garlic. With everything ready, I began preparing the rice in my rice cooker, making a small sauté with the crushed garlic and 1 tablespoon of olive oil.
When the garlic began to sauté, I added the washed rice and continued stirring it for a few moments. Then, I added the beans along with their cooking liquid, which had reduced during cooking until its amount was approximately similar to that of the rice.
Next, I added ¼ tablespoon of ground cumin and ⅓ tablespoon of salt. I stirred everything well to combine the ingredients, covered the rice cooker, and lowered the lever to start cooking. I let it cook until the cooker clicked and changed color, indicating that the rice was ready.

The result was fluffy and delicious rice with beans, with an appetizing appearance and a cumin aroma that invited us to enjoy it alongside the fish in sauce.
✨Yuca cakes

The third dish I prepared was yuca cakes, which were very well received for their flavor. To make them, I took three medium-sized yucas, washed them thoroughly, cut them into pieces with a knife, and removed their peels. Then, I made a slit down the center of each piece and placed them in the pressure cooker with enough water to cover them and ¼ tablespoon of salt.
I closed the cooker and, once it reached pressure, cooked the yuca for 6 minutes. When I opened it, I found that the yuca was very soft, so I transferred it to a bowl and removed the fibrous core. Using a fork, I mashed it until I obtained a purée.
Next, I added 1 tablespoon of olive oil and 5 peeled and crushed cloves of garlic. I mashed and mixed everything well, as I wanted the garlic flavor to stand out.
With clean hands, I shaped the mixture into medium-sized yuca cakes, using gentle pressure to form them. Then, I heated 3 tablespoons of olive oil in a frying pan, spreading it across the bottom. Once the oil was hot, I placed the cakes in the pan and browned them on both sides.

The result was a batch of golden, delicious yuca cakes that perfectly complemented this menu alongside the fish in sauce and rice with beans.
Friends, this was one of those lunches that leaves everyone wanting more. I hope you enjoyed it as much as we did and feel inspired to prepare it in your own homes.
Sending positive vibes and wishing you an excellent week filled with culinary delights!💁🌈
