Saludos Comunidad

Greetings, Community!
We all have our daily routines, though sometimes things come along that pull us out of them. Hopefully, those moments that break our routines also bring valuable lessons.
Celebrating 5 years of the @plantpoweronhive community is an interesting challenge—it’s a true testament to consistency.
This community means a lot to me. At first, the idea of preparing vegan meals felt quite strange—especially regarding the ingredients—until I realized that simply using plant-based foods is already part of this way of eating.
When we cook grains without any meat-based seasonings, the dish is vegan. I eventually noticed that there were days when I simply didn’t want to eat meat, chicken, or anything similar; I would just prepare plantains, grains, and a salad—and that’s vegan! It’s a step-by-step process of discovering a healthy way of eating that can easily be integrated into our existing habits.
Congratulations to the @plantpoweronhive community for staying active on this platform! Beyond the knowledge gained here, there’s the joy of experimenting with ingredients—swapping some out, trying others—that’s what learning is all about.
Since every birthday deserves a cake, I’m joining the challenge to bake a vegan one. I used ingredients that are accepted within this community, while also getting creative by adding a few extras to a base recipe I’ve used before. I’m really happy with the result—it’s all about exploring variations! For this recipe, the following ingredients were used:
1 ½ cups all-purpose flour
¾ cup sugar
1 teaspoon baking soda
½ teaspoon salt
1/3 cup vegetable oil
1 teaspoon lemon juice
1/3 cup carrot juice
½ cup water
Vanilla to taste
1/3 cup chocolate chips
50 grams mixed peanuts
Preparing the batter:
In a mixing bowl, combine the flour, salt, baking soda, sugar, and a portion of the chocolate chips. Mix everything well and set aside.
In a separate bowl, combine the water, oil, lemon juice, and vanilla.
Combine the dry and wet ingredients. Divide the batter and add the carrot juice to one portion. This results in one carrot-infused portion and one plain portion (the goal is to create a color gradient during baking). If you wish, you can add a little more water to the plain batter to make it smoother when pouring into the baking pan (just be careful not to make it too runny).
Bake for 35 minutes, perform the toothpick test, and remove from the oven. Let it cool, unmold, and garnish with the crushed mixed peanuts and the remaining chocolate chips.
The flavor is delicious; the touch of chocolate in the batter is fantastic, and the combination of mixed peanuts and chocolate for the topping is wonderful.
