Breakfast Goals: plantain and egg pancake recipe

This recipe is on the best I have tried , and ever since I knew about it, the regular pancake was now a second choice. This replaces bread and it is more satisfactory than bread and pancake.

Ingredients

2 ripe plantains
2 eggs
½ teaspoon of salt (to taste)
1 ball of onions (chopped)
Oil (to grease pan).

Here following are some steps I took to make this delicious recipe

Prepare the plantains

Peel the plantains and mash them in a bowl. You can use a fork or blender for a smooth texture. It would look like a plantain puree.

Mix the batter

  • In a bowl, beat the eggs evenly and add the smashed plantains.
  • Add the chopped onions, bell pepper and salt to taste
  • Mix everything well to form a thicker batter, the thicker the better, and more weight it adds.

Cook the pancakes

  • Place a non-stick pan over low heat and lightly grease the pan with oil or butter (if preferred)

  • Pour small portion of the batter and spread gently to form a circle.

  • Cook for about 2 minutes on one side, and flip to the other side and cook about 1 minute until it is golden brown.

Serve and enjoy

Serve hot with any sauce, drink or dip of your choice. A glass of milk would be nice.
