Greetings, dear vegan family! I recently came across a recipe on Instagram—specifically on the account of @ulises_cocinero, a Venezuelan chef who frequently shares recipes from my home country, Venezuela. The post features CATALINAS—delicious, traditional, and truly special cookies, also known as PALEDONIAS. They are characterized by being soft, spiced, and very satisfying. They are similar to the Mexican cookies known as COYOTAS; in fact, many years ago (about 30 years back), I used to make and sell CATALINAS that were very much like COYOTAS—though, naturally, each has its own unique characteristics. And to be perfectly honest, I didn't remember the exact recipe I used to use—I had even lost my notes on it—so you could say I started from scratch.

¡Saludos querida familia vegana!

I wanted to make these cookies because my husband really likes them. He often says that a CATALINA and a malt drink, go a long way—and he’s right, because this cookie is typically large and hearty, and provides a lot of energy; that is why it is one of the most popular treats sold across the country. That said, let's get to my recipe.

THE RECIPE / LA RECETA

Time, ingredients and equipment

  • Preparation time: The recipe takes approximately 1 hour and 30 minutes, accounting for boiling the papelón or piloncillo (unrefined cane sugar), letting it rest, and baking the CATALINAS (each baking batch takes a maximum of 15 minutes).

  • Yield: 20 CATALINAS, each 9 centimeters in diameter—relatively small compared to those sold by street vendors.

The ingredient quantities provided below must be followed precisely. I adhered as closely as possible to the original recipe I found, though I wasn’t entirely satisfied with the final result. I believe this was due to a lack of detail in the original post regarding the techniques for kneading and rolling out the dough; I later found other recipes that offered more comprehensive instructions. It is precisely for this reason that I am so particular about how recipes are presented in my own communities—omitting a single step, tip, or measurement can negatively impact the quality of the final product.

  • 650 grams of all-purpose wheat flour (pastry/baking flour).

  • 500 grams of papelón or piloncillo (unrefined cane sugar).

  • 200 ml of water.

  • 100 grams of butter (I used margarine).

  • 1 teaspoon of baking powder (I didn’t include this, as I didn’t have any on hand).

  • 1 teaspoon of baking soda.

  • 1 teaspoon of salt.

  • 1 teaspoon of vanilla extract (I added this myself, as I enjoy the aroma it provides).

  • Sweet spices to taste. I used a small cinnamon stick and a teaspoon of allspice berries, which I crushed in a mortar and pestle to better infuse the mixture with their fragrance. However, in the original recipe, the chef calls for 3 cinnamon sticks, 1 teaspoon of whole cloves, 1 teaspoon of allspice, and 1 teaspoon of ginger. I reduced the variety and quantity of the spices because my husband dislikes them.

  • Baking sheet, parchment paper (if you have some; otherwise, grease and flour the baking sheet), rolling pin, small spoon, mixing bowl, cookie cutters, spatula, plates, measuring cup, etc.

Tiempo, ingredientes y equipo

THE PROCEDURE / EL PROCESO

Place the papelón and water in a pot. Add the sweet spices and cook over medium-high heat for 15 minutes to dissolve the papelón and allow the spices to infuse the liquid. Once this time has passed, remove from the heat, strain to remove the sweet spices, and allow to reach room temperature. As I mentioned earlier, I crushed the allspice berries in a mortar for this step.

Meanwhile, sift the flour, salt, baking soda, and baking powder into a bowl. Stir to mix these dry ingredients well.

Once the piloncillo has rested, add the vanilla. Then add it to the flour along with the margarine and stir with a spatula. The dough will be very moist and sticky—which is exactly how it should be—though the chef whose recipe I followed didn't mention this; consequently, I added an extra 50 grams of flour and oiled my hands and the kneading surface, resulting in catalinas that were a bit too hard. Excessive kneading isn't necessary—about three minutes is enough—because the goal is to avoid developing a gluten network; instead, you want a soft dough so the cookie ends up with a cake-like texture. Let the dough rest for 10 to 15 minutes to allow it to relax.

After the resting period, roll out the dough to a thickness of one centimeter and cut out the shapes using a mold—such as a cookie cutter, a jar, or a cup. For this step, I had to dust both the work surface and the top of the dough with flour. Place the catalinas on a baking sheet lined with parchment paper, or—as I did—on a greased and floured tray. Transfer to an oven preheated to 180°C (this is crucial, as the CATALINAS need a blast of heat) and bake for 10 to 15 minutes (depending on your oven). Remove from the oven and let them cool. And now my CATALINAS are ready; they turned out a bit firm, but very tasty. They can be stored in a jar or an airtight container.
