Pumpkin vegetable, called Ugu in my region has a mix of earthy, nutty and slight bitter taste. This taste is often distinct when it's juiced.

Potatoes, spinach and fish sticks or stir fried eggs. Today I would prefer eggs with it.

That's another great recipe. However, since this is all about vegan food, potato with spinach would be just good. Fortunately, I'm growing some in my garden.
