The mushroom season is still going on with rain and wind. It's time to think about a dish for dinner with mushroom ingredients.

Meet with mushrooms again. A few days ago, I posted a recipe about grilled rice with mushrooms. This time, I will also share a mushroom recipe but a simpler recipe.

This recipe is perfect for dinner because it is easy to make, in fact, my husband can also make this recipe if I am tired and don't want to cook.

Well, once again, one of my regular sellers brought fresh mushrooms that were just taken directly from the oil palm plantation. Actually, this type of mushroom is a type of wild mushroom that grows around the oil palm plantation.

So, this time I will combine mushrooms with garlic plant-based butter which I will mix with rice.
You don't need to worry if you don't have a special tool for a rice cooker. This time I will cook rice manually with a cooking pan, also a steamer. The manual way of cooking rice is actually healthier and this is done by parents from generation to generation in the past.
So, let's just see how I cook rice manually first. Note: The rice I cooked is for two servings.

Rice Cooking Process
PREPARE INGREDIENTS:
- 1/2 cup of white rice
- 1 cup of water
NOTE: Please pay attention to the instructions on the amount of water in each rice package because each type of rice has a different texture when cooked. But in Indonesia, I always use the same measurement of 1:2 for rice:water for all types of rice.
How to Cook Rice

Prepare a cooking pan. Wash the rice several times, 3-5 times until the water looks clear.

Then, add 1 cup of water. And, cook for 8-10 minutes, until the water is completely drained. You can stir it or not.

Here, I didn't stir them at all and I let their water run out within 10 minutes. But you have to pay attention to your pan so that your rice doesn't burn.

Lift the rice, then prepare a steamer.
Transfer the rice to the steamer. Leave the steamer ready first, until the steaming water boils.

Steam the rice for fifteen minutes, then lift and open the steamer cover so that the water from the steamer cover does not fall into the rice.

You can also use a cloth cover on the steamer lid so that the water does not easily fall into the rice.
Mushrooms Cooking Process

PREPARE INGREDIENTS

300 grams of mushrooms

3 bay leaves to boil mushrooms
-
3 kaffir lime leaves to boil mushrooms

For seasoning:
-
30 grams of unsalted plant-based butter, I used margarine
-
20 grams of garlic
-
20 grams of shallots
-
1/2 tbsp of sesame seeds
-
1/2 tsp of coriander powder
-
1/2 tsp of pepper powder
-
1/2 tsp of sugar
-
1/2 tsp of salt
-
3 bay leaves
-
3 kaffir lime leaves
Cut Mushrooms Into Pieces


Since all parts of mushrooms are edible, so don't need to be cleaned in detail. Just throw away the part that is covered in soil and cannot be cleaned. But mostly, the soil is easy to clean from this type of mushroom.
Wash Mushrooms

The way to wash this mushroom is to prepare water in a bowl, dip the mushrooms in it, then drain. It's quite easy.
Blanch Mushrooms

We need to blanch mushrooms to remove the earthy smell from the mushrooms. So, boil 1 liter of water first. Add one teaspoon of salt, bay leaves, and kaffir lime leaves.

Cook for 3 minutes, then drain the mushrooms. Set aside.
Stir-fry Seasoning
First, melt the margarine in a cooking pot.Then, add garlic, chopped shallots, bay leaves, and kaffir lime leaves. Keep stirring them for a minute until they smell good.
Once they smell good, add all the seasonings: salt, sugar, pepper, coriander, and sesame seeds. Stir well.
Stir-fry Mushrooms

Add the blanched mushrooms. Then, stir-fry for about 5 minutes. Keep stirring them so they don't burn.
Add Steamed Rice


The final step is to add the steamed rice to the stir-fried mushrooms mixture. Stir them quickly until they are evenly mixed for about a few minutes. Remove and serve while still warm.
SERVING

Time to serve the garlic mushrooms rice while it's still warm. I love mushrooms combined with garlic and margarine. This recipe is perfect for dinner.

If you're not used to rice, of course, you can replace it with steamed potatoes or even lentils. They also would be a great combination!
