Dragon fruits can be a beautiful food coloring for gluten-free cakes.

Have you ever eaten chewy cakes made from sticky rice flour? Similar to mochi, also boba drink which has been popular for several years on social media.

In Indonesia, we have many variations of chewy cakes served with grated coconut. The most popular is klepon. Inspired by klepon which uses pandan leaves juice ingredients. This time, I made chewy cakes with beautiful pink color.

I have some supplies of baby dragon fruits that I bought from a cousin of mine who sells fruits and vegetables. They are called baby dragon fruits because their size is smaller than dragon fruits in general.

I'm thinking of other menu ideas that I can enjoy besides raw consumption or just making dragon fruit juice. So, I thought about the chewy cakes that I usually make with sweet potatoes or pumpkin ingredients.

I have coconut flesh that needs to be used immediately. So, it would be a good idea to combine dragon fruits with grated coconuts.
In fact, the use of dragon fruit in this chewy cake recipe is more dominant for natural coloring. Meanwhile, the taste of dragon fruit itself is not too dominant, but just a little sweet.

For the record, here I use sticky rice flour. But you can also use tapioca flour. Both types of flour are gluten free and will produce a chewy texture.
If later you don't find the right dough to shape into balls, or cakes, you can add more flour or more water if the dough is too hard.
THE INGREDIENTS

- 2 cups of sticky rice flour
- 150 grams of coconut flesh, grated and steamed
- 1-1 1/2 cups of dragon fruit juice
- 1/4 cup of sugar
- 1/2 tsp of salt
- (optional) pandan leaves, or vanilla
COOKING INSTRUCTIONS
STEP 1

Grate coconut flesh. Make sure the coconut flesh is clean from the brown skin on the back of the coconut flesh. This is to ensure that we will get grated coconut that is clean white
STEP 2

Prepare a heat-resistant container that will be used to steam the grated coconut. Transfer the grated coconut to a container. Then, add some chopped pandan leaves, as well as a sprinkle of salt. A sprinkle of salt is added to bring out the sweet and savory taste of the grated coconut.

Prepare the steamer until the steamer is hot, or the water in the steamer has boiled. Then, steam the grated coconut for 15 minutes.
STEP 3

In a container, mix sugar and dragon fruit. Just mash them with a fork so they're not too soft. Do not use a blender.

Here, I prepared a cup of mashed dragon fruit to mix into the flour.
STEP 4

In a larger container, add mashed dragon fruits into sticky flour little by little. Also, add 1/2 tsp of salt. Make sure not to pour the dragon fruit water all at once because it will cause a mess.


Knead the dough until it can be formed into balls or cakes. Here, I formed cakes randomly but similar to balls.
STEP 5

Prepare boiling water. Then, add the dragon fruit cakes. Cook the cakes until they float on the surface of the water. If they are floating on the surface of the water, it means they are ripe
STEP 6

Lift the dragon fruit cakes, and drain them with a spatula, then immediately take them to the steamed grated coconut. This aims to prevent the cakes from sticking to each other.

SERVING

Look at those beautiful cakes! I love how the overly red dragon fruits turn a beautiful pink when mixed with sticky flour. Also, when added grated coconut.

In fact, these chewy dragon fruits are sooooo good! In fact, my husband asked me to make it for him the next day. But sorry to say, I'm really tired of mixing it all up. Lol.
