Cooking is wonderful because from one recipe we can make several versions, this is the case of the famous Carrot Cake, we can find it very healthy and also not so healthy, there are dairy free, vegan, with different toppings and it is delicious, you just have to know how to mix certain ingredients.

I was counting and I have already made 6 versions, 5 of which I have shared on Hive, if I'm honest I still do not know which one is my favorite because each one has its charm, what I am clear is that my mom made an exquisite carrot cake and I will never forget that flavor, to this day I have not made that version because it is not healthy at all, but surely at any time I will do it to bring back some of those memories of my mother baking and the tempting smell in her kitchen.

This carrot cake is very healthy, it does not contain dairy or refined flours, it is also made with healthy fats such as coconut oil and as for the sweetness it is not cloying, without being tasteless, it is definitely a recipe for those people who care about their health but at the same time want to eat delicious.

Now without further ado I invite you to make this healthy Carrot Cake together.

Ingredients:

  • 70 Grams of Oat Flour.
  • 70 grams of Almond Flour.
  • 80 Grams of Carrot.
  • 2 eggs.
  • 3 tablespoons of coconut oil, you can use olive oil.
  • 60 grams of Applesauce, you can also use yogurt, although this version is dairy-free.
  • 30 grams of Raisins.
  • 3 tablespoons of grated Panela.
  • 1 heaping teaspoon of cinnamon.
  • 2 teaspoons of baking powder.
  • 1 pinch of salt.
  • 15 cms. diameter mold.

For the topping.

  • 1/2 cup of peeled almonds.
  • 1/4 Cup of Oat Milk.
  • 1 Tablespoon of Sugar, you can also use 2 or 3 Dates.
  • 1 teaspoon vanilla.

How to prepare:

Almond Toppings
We start by pouring all the ingredients in a blender, the peeled almonds, oat milk, sugar and vanilla, and blend, it is that easy, you will have a consistency similar to yogurt, we take this preparation to the refrigerator while we make our cake.

Note: If you don't have the milk you can substitute it with water, and if you are going to use dates, you must hydrate them first with water for about 10 minutes, normally I make this preparation with dates since it is much healthier but this time I didn't have them on hand.

The peeled Almonds we get it, putting them to soak in water for about 12 hours and then it is easy to remove the shell, we can help us with a knife, you just have to have a little patience but it's worth it.

Now let's prepare the cake.
We are going to preheat our oven to 180 degrees.

And then in a bowl we are going to put the eggs.

We also add the Applesauce, the grated Panela, you can use the sweetener you have at hand.

Now add the Coconut Oil and mix very well.

Then add the dry ingredients, the oat flour, the almond flour and the baking powder.

Our cake will be ready when it smells good in our kitchen and if we put the pastry stick in and it comes out dry.

Saludos cordiales amigos foodie!

La cocina es maravillosa ya que de una receta podemos sacar varias versiones, este es el caso de la famosa Torta de Zanahoria, la podemos encontrar muy saludable y también no tanto, la hay sin lácteos, veganas, con diferentes toppings y de igual manera es deliciosa, solo hay que saber mezclar ciertos ingredientes.

Estaba sacando la cuenta y ya he realizado 6 versiones, de las cuales 5 he compartido en Hive, si les soy sincera todavía no sé cuál de todas es mi preferida porque cada una tiene su encanto, lo que si estoy clara es que mi mamá hacía una torta de Zanahoria exquisita y nunca me olvidaré de ese sabor, hasta el día de hoy esa versión no la he hecho porque no es para nada saludable, pero seguro en cualquier momento la haré para traer un poco esos recuerdos de mi madre horneando y del tentador olor en su cocina.

Esta torta de Zanahoria es muy saludable, no contiene Lácteos, ni harinas refinadas, además está hecha con grasa saludable como es el aceite de Coco y en cuanto al dulzor no es empalagosa, sin ser desabrida, definitivamente es una receta para aquellas personas que cuidan de su salud pero que a la vez quieren comer delicioso.

Ahora sin más preámbulos te invito a que juntos hagamos esta saludable Torta de Zanahoria.

Ingredientes:

  • 70 Gramos de Harina de Avena.
  • 70 Gramos de Harina de Almendras.
  • 80 Gramos de Zanahoria.
  • 2 Huevos.
  • 3 Cucharadas de Aceite de Coco, puedes usar aceite de Oliva.
  • 60 Gramos de Puré de Manzana, también puedes usar yogurt, aunque esta versión es sin lácteos.
  • 30 Gramos de Uvas Pasas.
  • 3 Cucharadas de Panela rallada.
  • 1 Cucharadita de Canela bien colmada.
  • 2 Cucharaditas de Polvo para hornear.
  • 1 Pizca de sal.
  • Molde 15 cms. de diámetro.

***Para el Topping. ***

  • 1/2 Taza de almendras Peladas.
  • 1/4 de Taza de Leche de Avena.
  • 1 Cucharada de Azúcar, también puedes usar 2 o 3 Dátiles.
  • 1 Cucharadita de Vainilla.

Modo de Preparación:

Toppings de Almendras.
Comenzamos echando todos los ingredientes en una licuadora, las Almendras peladas, la Leche de Avena, el Azúcar y la Vainilla, y se licua, así de fácil es, te quedará una consistencia parecida al yogurt, llevamos esta preparación a la nevera mientras hacemos nuestra torta.

Nota: Si no tienes la Leche la puedes sustituir por Agua, y si vas a usar Dátiles, debes hidratarlos primero con Agua por unos 10 minutos, normalmente yo hago esta preparación con Dátiles ya que es mucho más saludable pero esta vez no los tenía a mano.

Las Almendras peladas la conseguimos, poniéndolas a remojar en Agua por aproximadamente 12 horas y luego es fácil quitarles la cascara, nos podemos ayudar con un cuchillo, solo hay que tener un poco de paciencia pero vale la pena.

Ahora vamos a preparar la torta.
Vamos a precalentar nuestro horno a 180 grados.

Y luego en un recipiente vamos a echar los huevos.

Añadimos también el Puré de Manzana, la Panela rallada, puedes usar el endulzante que tengas a la mano.

Ahora agregamos el Aceite de Coco y mezclamos muy bien.

A continuación echamos los ingredientes secos, la harina de Avena, la de Almendras y el Polvo para hornear.

Esto lo mezclamos integrando bien los ingredientes.

Luego agregamos la Zanahoria rallada y las Uvas Pasas.

Mezclamos nuevamente que todos los ingredientes queden muy bien integrados.

Ahora vertemos nuestra mezcla en un molde previamente engrasado y enharinado.

Metemos al horno por aproximadamente 20 minutos.

Nuestra Torta estará lista cuando huela rico nuestra cocina y si metemos la varilla repostera y nos sale seca.

Dejamos que enfríe para desmoldar y agregarle el Toppings.

Desmoldamos, miren que hermosa!

Ahora vamos a colocarle el Toppings, no se enreden mucho, háganlo fácil, yo usé una cucharilla para cubrir la torta y por ultimo solo espolvoreé con Canela para que se viera más bonito y además la Canela la va muy bien a esta Torta.
