As you all know we are celebrating, our beautiful community is having an anniversary and our dear friend @sirenahippie has invited us to be part of this celebration by making a cake, I was looking forward to this moment and today thank God I was able to bring this simple sweet gift for us to continue celebrating together!

Before presenting my Cake I want to thank the community @plantpoweronhive for receiving us all so warmly, I remember a little over a year ago I came to this community and when I made my first publication here, I was really very nervous, I saw such spectacular recipes that I thought mine was insignificant, but I got the support and the warmth that is only expected from a family.

Here I have also had the push to continue eating healthily since due to certain health problems, my doctor a few years ago had recommended me to eat a lot of vegetables, in fact I had several years practically converted into a vegan, but for certain reasons I did not persevere and went back to old eating habits that were not really doing me good.

In addition to this I was tired of repeating the same recipes, and here in this community I have been greatly enriched, learning to prepare endless vegan recipes, healthy and delicious.

Thank you dear community, I hope there will be many more anniversaries full of victories and successes and much more learning, I know it will be so because something that I have perceived, is that everything has been done with love and what is done that way lasts over time!

Now without further ado here is my Cake with lots of love for you beloved vegan community!

Lemon and Blueberry Cake.

Ingredients for the Cake:

  • 160 grams of Sugar.
  • 90 Ml of Olive Oil, you can use another vegetable oil.
  • 2 teaspoons of Vanilla.
  • 175 ml of vegetable milk, I used oat milk.
  • Juice of 2 juicy lemons.
  • Zest of 2 lemons.
  • 120 grams of all-purpose wheat flour.
  • 60 grams of almond flour.
  • 2 teaspoons of Baking Powder.
  • 1/4 teaspoon of salt.
  • 120 grams of blueberries.
  • 15 cm. diameter mold.

Ingredients for the Lemon Cream.

  • 600 Ml of vegetable milk, I used oat milk.
  • 10 tablespoons of Lemon Juice.
  • The grated peel of two lemons.
  • 4 spoonfuls of grated Panela, you can use white sugar.
  • 3 tablespoons of corn starch.
  • 1 and 1/2 teaspoon of Agar Agar.

Let's go with the preparation:

Lemon Cream.

In a pot we are going to put the lemon zest, vegetable milk, corn starch, Agar Agar and turmeric.

Whisk well integrating the ingredients.

Now add the Lemon Juice, the Papelón, and beat again.

This preparation we take it to the stove over low heat, it is important to stir constantly so that lumps do not form, this will last about 10 minutes until the cream is ready, the texture of the cream will be slightly thick.

Now to make sure that we do not have lumps to our cream we pass it through a strainer and then we put plastic wrap over it so that it does not become a thick layer on the surface, let it cool to room temperature and then put it in the refrigerator for a while.

Note: This lemon cream is superficially sweet and you can also use it for the preparation of other desserts and to accompany it with fruits.

Lemon and Blueberry Sponge Cake.

Preheat our oven to 180 degrees.

Now in a bowl pour the sugar and oil.

Finally and very important we add the blueberries and mix with smooth and enveloping movements.

Now pour into our mold previously greased and floured.

Bake in the oven at 180 degrees for approximately 40 minutes, but remember that everything will depend on your oven, always keep an eye on the 30 minute mark.

It will be ready when it smells good and you stick a stick in it and it comes out dry.

Let it cool and then unmold it, it is important that it cools very well to unmold it and fill it since this cake is moist.

Now that the Lemon Cream is cold and the cake is ready, let's fill it.

I tell you that at that moment I was literally trembling because I thought that I could damage the cake when I started to chop it in order to put the cream.

Well, I was able to cut it, ufff, thank God it remained intact and I was able to continue.

Now we put the lemon cream on top and put the top part back on.

Then I made a glaze with 2 tablespoons of lemon juice and six tablespoons of powdered sugar or powdered sugar, I mixed those ingredients well and then added it on top of the cake, I know my husband is going to love this because it adds more sweetness to this cake.

Then I started to garnish with some finely cut Lemon slices and Blueberries.

Como todos saben estamos de fiesta, nuestra hermosa comunidad está de aniversario y nuestra querida amiga @sirenahippie nos ha invitado a ser parte de esta celebración haciendo un pastel, estaba deseando con ansias este momento y hoy gracias a Dios he podido traer este sencillo regalo dulce para que sigamos celebrando juntos!

Antes de presentarles mi Pastel quiero agradecer a la comunidad @plantpoweronhive por recibirnos a todos tan cálidamente, recuerdo hace un poco más de un año llegué a esta comunidad y cuando hice mi primera publicación por aquí, realmente estaba muy nerviosa, veía recetas tan espectaculares que pensaba que la mía era insignificante, pero me conseguí con el apoyo y con la calidez que solo se espera de una familia.

Aquí también he tenido el empuje para seguir alimentándome saludablemente ya que por ciertos problemas de salud, mi médico de hace unos años me había recomendado comer muchos vegetales, de hecho tuve varios años convertida prácticamente en vegana, pero por ciertas razones no perseveré y volví a viejos hábitos de alimentación que verdaderamente no me estaban haciendo bien.

Aunado a esto estaba cansada de repetir las mismas recetas, y aquí en esta comunidad me he enriquecido en gran manera, aprendiendo a preparar un sin fin de recetas veganas, saludables y deliciosas.

Gracias querida comunidad espero y sean muchos más aniversarios llenos de victorias y éxitos y de mucho más aprendizaje, sé que será así porque algo que he percibido, es que todo se ha hecho con amor y lo que se hace de esa manera perdura con el tiempo!

Ahora sin más preámbulos aquí mi Pastel con mucho amor para ti amada comunidad vegana.

Pastel de Limón y Arándanos.

Ingredientes para el Bizcocho:

  • 160 gramos de Azúcar.
  • 90 Ml de Aceite de Oliva, puedes usar otro Aceite vegetal.
  • 2 Cucharaditas de Vainilla.
  • 175 Ml de Leche vegetal, yo usé de Avena.
  • El Jugo de 2 Limones Jugosos.
  • Ralladura de 2 Limones.
  • 120 Gramos de Harina de Trigo todo uso.
  • 60 Gramos de Harina de Almendras.
  • 2 Cucharaditas de Polvo Para Hornear.
  • 1/4 de Cucharadita de Sal.
  • 120 Gramos de Arándanos.
  • Molde de 15 cms. de diámetro.

Ingredientes para la Crema de Limón.

  • 600 Ml de Leche Vegetal, he usado de Avena.
  • 10 Cucharadas de Jugo de Limón.
  • La piel rallada de dos Limones.
  • 4 Cucharadas de Panela rallada, puedes usar Azúcar blanca.
  • 3 Cucharadas de Almidón de Maíz.
  • 1 y 1/2 Cucharadita de Agar Agar.

Vamos con la preparación:

Crema de Limón.

En una olla vamos a echar la ralladura de Limón, la Leche vegetal, el Almidón de Maíz, el Agar Agar y la Cúrcuma.

Batimos integrando bien los ingredientes.

Ahora añadimos el Jugo de Limón, El Papelón, y batimos nuevamente.

Esta preparación la llevamos a la cocina a fuego bajo, es importante remover constantemente para que no se formen grumos, esto durará mas o menos 10 minutos hasta que la crema esté lista, la textura de la crema será ligeramente espesa.

Ahora para asegurarnos que no nos queden grumos a nuestra crema la pasamos por un colador y luego le colocamos papel film por encima para que no se le haga una capa gruesa en la superficie, dejamos enfriar a temperatura ambiente y luego metemos un rato en la nevera.

Nota: Esta crema de Limón es superficialmente dulce y también la puedes usar para la elaboración de otros postres y para acompañarla con Frutas.

Bizcocho de Limón y Arándanos.

Precalentamos nuestro horno a 180 grados.

Ahora en un recipiente echamos el Azúcar y el Aceite.

Luego integramos la Vainilla y mezclamos.

Seguidamente agregamos la Leche vegetal, batimos nuevamente, integrando todo muy bien.

Ahora es el turno del Jugo de Limón y de la ralladura. y mezclamos nuevamente.

Agregamos las harinas, primero echamos la Harina de Trigo junto con el Polvo para hornear y cernimos, después echamos la Harina de Almendras.

Un poco de Sal.

Y batimos hasta tener una mezcla homogénea.

Por último y muy importante echamos los Arándanos y mezclamos con movimientos suaves y envolventes.

Ahora vertemos en nuestro molde previamente engrasado y enharinado.

Metemos al horno a 180 grados por aproximadamente 40 minutos, pero recuerda que todo dependerá de tu horno, siempre hay que estar pendiente al minuto 30.

Estará listo cuando huela rico y le metas una varilla y esta salga seca.

Dejamos enfriar para luego desmoldarlo, es importante que se enfríe muy bien para desmoldarlo y rellenarlo ya que este Bizcocho es húmedo.

Bueno ya teniendo la Crema de Limón fría y el Bizcocho, vamos entonces a rellenarlo.

Les cuento que en ese momento estaba temblando literalmente porque pensaba que se me podía dañar el Bizcocho cuando lo empezara a picar para poder ponerle la crema.

Bueno lo pude picar, ufff, gracias a Dios quedo intacto y pude seguir.

Ahora le ponemos la crema de Limón por encima y le volvemos a poner la parte de arriba.

Luego hice un glaseado con 2 Cucharadas de Jugo de Limón y seis de Azúcar Glas o Azúcar pulverizada, esos ingredientes los mezcle bien y luego se lo agregué encima a la torta, sé que a mi esposo esto le va a encantar porque aporta más dulzura a este pastel.

Después empecé a adornar con unas rodajas de Limón cortadas finamente y con Arándanos.
