Greetings dear vegan community ๐Ÿ’š

Here in my country there is a saying that every Venezuelan is born with an Arepa under his arm, and that is because the Arepa is one of those dishes that most identify us, many Venezuelan families can not spend a day without breakfast with an arepa.

This exquisite bread is basically made of corn flour, although in the Andean regions of the country we can also see them made with wheat flour, there are several versions, the truth is that it is one of our star dishes, I think what I personally like about the Arepa is that it can be filled with many things and it is always delicious!

I made my first Arepa when I was nine years old and who taught me how to prepare it was my dad, because he said he wanted to try one that was made with my own hands, from that moment until now I continue to make my own Arepas and the truth is that I think that most Venezuelans know how to make it, because this dish can not miss in our homes.

Today I bring you my vegan Arepa recipe, I have prepared the dough with corn and carrot flour, and the filling is based on lentils, but to raise the level of this dish and be even more appetizing I have put some caramelized onions, this onion was inspired by my dear sister @verdesmeralda, with a recipe she shared with us in which she used some onions that made her dish look very tempting and delicious.

Now without further ado I invite you to make these delicious Vegan Arepas together.

Ingredients:

  • To measure I used a 250 Ml measuring cup.
  • 1 cup of lentils cooked al dente.
  • 1 cup of corn flour.
  • 300 Ml of filtered water.
  • 3 tablespoons of Extra Virgin Coconut Oil or other vegetable oil.
  • 3 tablespoons of extra virgin olive oil or other vegetable oil.
  • 1 Tbsp Soy Sauce.
  • 1 tablespoon of Apple or White Vinegar.
  • Pepper and salt to taste.
  • 1/2 teaspoon cumin.
  • 1 teaspoon turmeric.
  • 50 grams of grated carrot.
  • 1 Stem of Chives.
  • 2 garlic.
  • Half a small Paprika.
  • 1 large white onion.
  • 3 sprigs of Cilantro.
  • 1 spoonful of brown sugar or white sugar.

Let's go with our preparation.

The first thing we will begin to do, is our caramelized onion, since it needs to cook for a long time over low heat.

Cut the onion into julienne strips and put it to cook in a pan with three tablespoons of olive oil, you know you can use the oil you have on hand, this cooking will be done over low heat, until the onion begins to have a golden hue.

Now while we let the onion cook, we are going to start preparing the dough for our Arepas, in a bowl pour the 300 ml of water and a teaspoon of salt.

Then we add the corn flour and use a spoon to mix and then knead with our hands, it is important to knead well so that there are no lumps.

When we have our dough almost ready we add the grated carrot, continue kneading, integrating the carrot well and add a teaspoon of turmeric, this gives it an extra flavor and a more intense orange color.

In the process it may be missing a little more corn flour or water, the important thing is that we should have a smooth dough without lumps and moldable, well now we have our dough ready, let's put it aside.

Now we continue making our caramelized onion, at this point it is already taking a golden color, it is time to add 1/2 teaspoon of salt, 1 tablespoon of brown or white sugar.

Mix, add 1 tablespoon of Apple or White Vinegar, mix again and let cook over low heat until our onion is well browned, about 10 minutes more of cooking, turn off the stove and set aside.

We are now going to chop our seasonings to flavor the Lentils, we chop the garlic, paprika and chives.

Now we mount to the kitchen a pot, we put the three tablespoons of Coconut Oil, I comment that with this oil the lentils grab a very delicious flavor, but if you do not have it you can use another vegetable oil.

When the oil is a little hot, start frying the garlic together with the paprika and chives, cook over medium heat, making sure that nothing burns, mix and fry for about a minute.

Then add the Lentils to our sofrito, mix and add salt to taste.

We also add the cumin, black pepper and soy sauce, mix again and let it cook over low heat for about 10 minutes.

After this time the lentils are ready, add very small chopped coriander and turn off the heat, set aside.

Now is the time to shape our arepas, normally they are cooked on a griddle or budare, they can also be fried, but I am going to cook them in my Tosti Arepa, I love this device because it already has a round shape and also the Arepas have a toasted surface.

We assemble our Tosti Arepa or griddle on the stove, we wait for it to be very hot and we grease it, using absorbent paper or napkin.

Then we quickly go to our dough, we first make a ball and then we flatten it with both hands and we give it its rounded shape.

We place our arepas on the griddle, in my case, in the tosti arepa, let it cook on one side, then flip to cook on the other side, the surface should be golden brown, well now our Arepas are ready to be filled.

With a knife we open the Arepas and place the filling, first we put the Lentils, here if you want you can add a little bit of olive oil.

Aquรญ en mi paรญs hay un dicho que dice, que cada venezolano nace con una Arepa debajo del brazo, y eso es porque la Arepa es uno de esos platos que mรกs nos identifican, muchas familias venezolanas no pueden pasar un dรญa sin desayunar con una arepa.

Este exquisito Pan por llamarle de alguna manera, estรก hecho bรกsicamente a base de Harina de Maรญz, aunque en las regiones andinas del paรญs tambiรฉn las podemos ver hechas con harina de trigo, hay varias versiones lo cierto es que es uno de nuestros platos estrellas, ยกcreo que lo que personalmente me gusta de la Arepa es que se puede rellenar de muchas cosas y siempre queda deliciosa!

Mi primera Arepa la hice a los nueve aรฑos y quien me enseรฑรณ a prepararla fue mi papรก, pues รฉl decรญa que querรญa probar una que fuese hecha con mis propias manos, desde ese momento hasta ahora sigo haciendo mis propias Arepas y es que la verdad creo que la mayorรญa de los venezolanos la sabemos hacer, pues este plato no puede faltar en nuestros hogares.

Hoy les traigo mi receta vegana de Arepa, la masa la he preparado con harina de Maรญz y Zanahoria, y el relleno es a base de Lentejas, pero para subirle el nivel a este plato y quedara aรบn mรกs apetecible le he puesto unas Cebollas caramelizadas, esto de la Cebolla me lo inspiro mi querida hermana @verdesmeralda, con una receta que ella nos compartiรณ en la cual usรณ unas Cebollas que hacรญa ver su plato muy tentador y delicioso.

Ahora sin mรกs preรกmbulos te invito a que juntos hagamos estas deliciosas Arepas Veganas.

Ingredientes:

  • Para medir he usado una taza medidora de 250 Ml.
  • 1 Taza de Lentejas cocidas al dente.
  • 1 Taza de Harina de Maรญz.
  • 300 Ml de Agua filtrada.
  • 3 Cucharadas de Aceite de Coco Extra Virgen u otro Aceite vegetal.
  • 3 Cucharadas de Aceite de Oliva extra virgen u otro Aceite vegetal.
  • 1 Cucharada de Salsa de Soya.
  • 1 Cucharada de Vinagre e Manzana o Blanco.
  • Pimienta y Sal al gusto.
  • 1/2 Cucharadita de comino.
  • 1 Cucharadita de Cรบrcuma.
  • 50 Gramos de Zanahoria Rallada.
  • 1 Tallo de Cebollรญn.
  • 2 ajos.
  • Medio Pimentรณn pequeรฑo.
  • 1 cebolla blanca grande.
  • 3 Ramitas de Cilantro.
  • 1 Cucharada de Azรบcar moreno, o Azรบcar blanca.

Vamos con nuestra preparaciรณn.

Lo primero que comenzaremos a hacer, es nuestra Cebolla caramelizada, ya que esta necesita cocinarse un buen tiempo a fuego bajo.

Cortamos la Cebolla en juliana y la ponemos a cocinar en una sartรฉn con tres cucharadas de aceite de Oliva, ya sabes puedes usar el aceite que tengas a la mano, esta cocciรณn se va a hacer a fuego bajo, hasta que la Cebolla empiece a tener un tono dorado.

Ahora mientras dejamos cocinar la Cebolla, vamos a empezar a preparar la masa para nuestras Arepas, en un recipiente echamos los 300 ml de Agua y una Cucharadita de sal.

Luego Agregamos la harina de Maรญz y usamos una cuchara para mezclar y luego amasamos con nuestras manos, es importante amasar bien que no nos queden grumos.

Cuando ya tengamos nuestra masa casi en su punto le aรฑadimos la Zanahoria rallada, seguimos amasando, integrando bien la zanahoria y le agregamos una cucharadita de Cรบrcuma, esto le da un sabor extra y un color naranja mรกs intenso.

En el proceso puede que falte un poco mรกs de harina de Maรญz o por lo contrario Agua, lo importante es que nos debe quedar una masa suave sin grumos y moldeable, bueno ya tenemos lista nuestra masa, vamos a reservarla.

Ahora seguimos haciendo nuestra Cebolla caramelizada, en este momento ya estรก tomando un color dorado, es momento para aรฑadir 1/2 cucharadita de Sal, 1 Cucharada de Azรบcar moreno o blanca.

Mezclamos, agregamos 1 cucharada de Vinagre de Manzana o Blanco, mezclamos nuevamente y dejamos cocinar a fuego bajo hasta que nuestra cebolla quede bien dorada, aproximadamente 10 minutos mรกs de cocciรณn, apagamos la cocina y reservamos.

Vamos ahora a picar nuestros aliรฑos para dar sabor a las Lentejas, picamos los ajos, el Pimentรณn y Cebollรญn.

Ahora montamos a la cocina una olla, le colocamos las tres cucharadas de Aceite de Coco, les comento que con este Aceite las lentejas agarran un sabor muy delicioso, pero sin no lo tienes puedes usar otro Aceite vegetal.

Cuando ya el Aceite estรฉ un poco caliente empezamos a sofreรญr el Ajo junto con el Pimentรณn y Cebollรญn, esto lo cocinamos a fuego medio, pendiente que nada se nos queme, mezclamos y sofreรญmos por un minuto aproximadamente.

Luego agregamos las Lentejas a nuestro sofrito, mezclamos y aรฑadimos la Sal al gusto.

Agregamos tambiรฉn el Comino, la pimienta negra y la salsa de soya, mezclamos nuevamente y dejamos cocinar a fuego bajo unos 10 minutos.

Pasado ese tiempo ya las lentejas estรกn listas, le aรฑadimos cilantro picado muy pequeรฑo y apagamos el fuego, reservamos.

Ahora es el tiempo de dar forma a nuestras arepas, normalmente se cocinan en plancha o budare, tambiรฉn se pueden hacer fritas, pero yo las voy a cocinar en mi Tosti Arepa, este aparato me encanta porque ya tiene la forma redonda y ademรกs las Arepas quedan con la superficie tostadita.

Montamos nuestro Tosti Arepa o plancha a la cocina, esperamos que estรฉ bien caliente y lo engrasamos, usando papel absorbente o servilleta.

Luego rรกpidamente vamos a nuestra masa, hacemos primero una bola y luego aplastamos con las dos manos y le vamos dando su forma redondeada.

Colocamos nuestras arepas en la plancha, en mi caso, en el tosti arepa, dejamos que se cocine por un lado, luego volteamos para que se cocine por el otro lado, la superficie debe quedar doradita, bueno ya nuestras Arepas estรกn listas para ser rellenadas.

Con un cuchillo abrimos las Arepas y colocamos el relleno, primero le ponemos las Lentejas, aquรญ si quieres le puedes aรฑadir un poquito de Aceite de oliva.

Y despuรฉs le colocamos la Cebolla caramelizada, les cuento que esta Cebolla le quedo buenรญsima, para la prรณxima en vez de preparar una solo Cebolla hago mรกs porque de verdad le da un toque mรกgico a la receta ๐Ÿคค
