Greetings, dear vegan community! I hope you're all doing well! 🥰

Today I'm bringing you a three-in-one cake, combining two delicious fruits and one vegetable. Carrots are always welcome in my desserts.

This cake is super healthy. I really wanted to have a light snack today that was kind to my body. This recipe doesn't have any added sugar. I used raisins for a touch of sweetness, and the orange juice also helped a bit so the cake wasn't bland at all, as it was super sweet and natural.

In this recipe, I used a blend of two flours, but you can use just one. I personally like to mix wheat flour with almond flour, but you can use just one of them, or this cake is also great with oat flour; it's very healthy and economical.

Ingredients:

  • 50 grams of all-purpose wheat flour.
  • 40 grams of almond flour.
  • 40 grams of raisins, previously soaked in water.
  • 1/2 apple.
  • 125 ml of almond milk. You can use just water or the plant-based milk of your choice.
  • 2 tablespoons of chia seeds soaked in 125 ml of orange juice.
  • 65 grams of grated carrots.
  • 1 teaspoon of baking powder.

Let's get started:

Start by preheating your oven to 180 degrees.

Then pour the grated carrots into a bowl.

Add the orange juice with the chia seeds and mix.

Now we add the flours, first the wheat flour, which we will sift, and then we add the almond flour.

Let's mix again.

Now add the plant-based milk and mix again.

Now we're going to add the raisins. This ingredient is very important because it will add sweetness to this cake.

Add the baking powder and mix all the ingredients together using your hand mixer.

Pour into our previously greased and floured mold.

Now we peel and slice our apple. Cut it however you like.

And we decorate our cake with the apple 😍

Bake for approximately 30 minutes. Always remember to test with a toothpick. If it comes out dry when inserted into the cake, it's ready!

Halfway through baking, I added a little grated panela on top. This is completely optional; the cake will be more golden.

Hoy les traigo tres en uno en un pastel, ya que he combinado dos deliciosas frutas y un vegetal, la Zanahoria, siempre será bienvenida en mis postres.

Este pastel está super saludable, realmente hoy quería merendar algo ligero y que sea amable con mi cuerpo, esta receta no lleva azúcar añadida, he usado uvas pasas para dar el toque de dulzura y el Zumo de Naranja también ha ayudado un poco a que el pastel no sea para nada insípido pues este zumo estaba super dulce y natural.

En esta receta he usado una mezcla de dos Harinas, pero puedes usar solo una, personalmente me gusta mezclar Harina de Trigo con harina de Almendras, pero puedes usar solo alguna de las dos o también este pastel queda muy bien con harina de Avena, esta es muy saludable y económica.

Ingredientes:

  • 50 Gramos de harina de Trigo Todo Uso.
  • 40 Gramos de Harina de Almendras.
  • 40 Gramos de Uvas Pasas previamente hidratadas en Agua.
  • 1/2 Manzana.
  • 125 Ml de Leche vegetal de Almendras, puedes usar solo Agua o la bebida vegetal de tu preferencia.
  • 2 Cucharadas de Chía hidratadas en 125 Ml de Jugo de Naranja.
  • 65 Gramos de Zanahoria rallada.
  • 1 cucharadita de polvo para hornear.

Vamos con nuestra preparación:

Comenzamos precalentando nuestro horno a 180 grados.

Luego echamos la Zanahoria rallada en un recipiente.

Agregamos el Jugo de Naranja con la Chía y nos disponemos a mezclar.

Ahora agregamos la s harinas, primero la harina de trigo, esta la vamos a cernir y luego incorporamos la Harina de Almendras.

Vamos a mezclar nuevamente.

Incorporamos ahora la Leche Vegetal y volvemos a mezclar un poco.

Ahora vamos a agregar las Uvas Pasas, este ingrediente es muy importante porque le aportará dulzura a esta torta.

Añadimos el Polvo para hornear y con nuestro batidor manual integramos muy bien todos los ingredientes.

Vertemos en nuestro molde previamente engrasado y enharinado.

Ahora pelamos y cortamos nuestra Manzana, córtala como más te guste.

Y decoramos nuestro pastel con la Manzana 😍

Metemos al horno por unos 30 minutos aproximadamente, recuerda siempre hacer la prueba del palillo, ¡si este sale seco al introducirlo al pastel es porque este está listo!

A la mitad de cocción le agregué un poquito de Panela rallada por encima, esto es totalmente opcional, el pastel queda más doradito.
