Every recipe I make is a challenge for me, because they are new recipes and there is always that curiosity and anxiety to know and see the results.

Although I still haven't been feeling well, don't be alarmed it's just a flu, but it hasn't put me to bed, I'm still standing, because I was able to make these cookies with the energy I still have left, I didn't want to waste time and I couldn't miss the opportunity to make this recipe that was waiting for me for quite a while now, with all the ingredients at hand, what more can I ask for?

I can tell you for sure that this recipe that I bring you today, is great, it was worth the effort, the cookies were crispy and a soft taste of sweet potato, sweet potato or sweet potato, plus the chocolate was exquisite, it seems to me an ideal gift for these holidays!

Ingredients:

  • 125 grams of sweet potato, sweet potato or sweet potato, this must be cooked.

Preheat the oven to 180 degrees centigrade.

In a bowl we are going to place the sweet potato and we are going to crush it very well with a fork.

We mix a little and add the vegetable milk, we continue mixing, helping us with a pastry paddle.

Next add the sesame seeds, mix again, if you feel that the dough is too dry, add another little bit of milk, but very little.

And start to knead with your hands, until you get the desired consistency, the dough should not stick to your hands and it should be very soft.

Now we are going to extend it on butter paper, this is done so that this procedure is much easier and also avoid that the dough sticks to the place where we are working.

Stretch the dough very well with our rolling pin, the thickness of the dough should be very thin.

Then we start shaping with our cookie cutters, I have used, heart and star, you just use whatever you have on hand.

Now we place our cookies on a baking sheet, we put waxed paper so they do not stick, you can also grease and flour the tray.

We put them in the oven at 180 degrees for about 15 to 20 minutes, remember that each oven is different, always keep an eye on the 12th minute to see how they are.

As my oven is slow, these cookies were in 22 minutes approximately, I always like them to be with a golden color.

Once they are out of the oven, let them cool and then fill them.

Now we are going to melt the chocolate in a double boiler.

Cada receta que hago es para mĂ­ un reto, porque son recetas nuevas y siempre estĂĄ esa curiosidad y ansiedad por saber y ver los resultados.

Aunque aĂșn no me he sentido bien, no se alarmen es solo una gripe, pero no me ha tumbado en la cama, aĂșn sigo de pie, pues pude hacer estas galletas con la energĂ­a que aĂșn me queda, no querĂ­a perder tiempo y tampoco podĂ­a perder la oportunidad de hacer esta receta que estaba esperando por mĂ­ desde hace ya un buen tiempo, con todos los ingredientes a la mano, quĂ© mĂĄs puedo pedir?

Les puedo decir con seguridad que esta receta que les traigo hoy, estĂĄ buenĂ­sima, valiĂł la pena el esfuerzo, las galletas quedaron crujientes y un suave sabor a Boniato, Batata o Camote, ademĂĄs el Chocolate le quedo exquisito, ÂĄme parece un regalo ideal para estos dĂ­as de fiestas!

Ahora sin mĂĄs palabras vamos juntos y hagamos estas exquisitas Galletas.

Ingredientes:

  • 125 Gramos de Boniato, Batata o Camote, este debe estar cocido.
  • 30 Gramos de Leche vegetal, yo usĂ© de Avena.
  • 30 Gramos de Aceite Vegetal, usĂ© Aceite de Oliva.
  • 25 Gramos de AzĂșcar blanca, puedes usar Otro endulzante.
  • 1/2 de Cucharadita de Sal.
  • 150 Gramos de Harina de Trigo Todo Uso.
  • 10 Gramos de AjonjolĂ­ Negro, opcional.
  • 50 Gramos de Chocolate oscuro, 60, 70, 80 por ciento.
  • Papel encerado.
  • Moldes para galletas, de estrella de 75.4 mm y corazĂłn de 70 mm.

Vamos con nuestra preparaciĂłn:

Precalentamos el horno a 180 graos centĂ­grados.

En un bol vamos a colocar el boniato y la vamos a aplastar muy bien con un tenedor.

Luego añadimos el Aceite y el AzĂșcar.

También agregamos la sal y procedemos a mezclar muy bien.

Ahora es el momento de integrar la Harina, esta la tamizamos.

Mezclamos un poco y agregamos la Leche vegetal, seguimos mezclando, ayudĂĄndonos con una paleta de reposterĂ­a.

Seguidamente vamos a añadir el Ajonjolí, mezclamos nuevamente, si sientes que la masa estå muy seca, agrega otro poquito de Leche, pero muy poquito.

Y empezamos a amasar con las manos, hasta lograr la consistencia deseada, la masa no se debe pegar a nuestras manos y esta debe quedar muy suave.

Ahora la vamos a extender en papel manteca, esto se hace para que este procedimiento sea mucho mås fåcil y también evitamos que la masa quede pegada al lugar en donde la estamos trabajando.

Estiramos muy bien con nuestro rodillo, el grosor de la masa debe ser bien delgado.

Luego empezamos a dar forma con nuestros moldes para galleta, yo he usado, corazĂłn y estrella, tu solo usa lo que tengas a la mano.

Ahora colocamos nuestras Galletas en una bandeja para horno, le colocamos papel encerado para que no se peguen, también puedes engrasar y enharinar la bandeja.

Metemos al horno a 180 grados por unos 15 a 20 minutos, recuerda cada horno es diferente, siempre hay que estar pendiente en el minuto 12 a ver como estĂĄn.

Como mi horno es lento, estas Galletas estuvieron en 22 minutos aproximadamente, siempre me gustan que queden con un color dorado.

Sacadas del horno las dejamos enfriar para luego rellenarlas.

Ahora vamos a derretir el Chocolate en baño de María.

Una vez listo empezamos a rellenar nuestras galletas, tomamos una, le agregamos el Chocolate y luego tapamos con la otra galleta.

Este procedimiento lo hacemos con todas las Galletas restantes.

Y listo, ya podemos disfrutar nuestras Deliciosas y Crujientes galletas de Boniato! đŸ€€
