Trying Vanilla or Cashew Ice Cream Recipe? / Probando Receta de Helado de Vainilla o Anacardo?

Greetings, dear vegan community 💚

I've been looking for a recipe for vegan vanilla ice cream for a while now, as that's always been my favorite flavor. But as we all know, ice cream ingredients are usually high in dairy, and I try to avoid it as much as possible.

The vegan recipes I've seen online are generally made with banana and cashews. The latter caught my attention because I've already tried the Banana and Vanilla recipe, which is delicious, by the way. But when I decided to make this one with cashews, I had to wait a few weeks to make the recipe because cashews are really expensive!

The original recipe says it's Vanilla Ice Cream, but now that I've made the recipe and tried it, I'm wondering, is it vanilla or cashew? Because to be honest, the predominant flavor is the cashew, even though it has vanilla.

What I liked most about this recipe was its creaminess, and if you love cashews like I do, you'll definitely love it. However, I think it's very expensive because it doesn't have that much yield.

As always, I made some changes to this recipe. The original recipe uses liquid Stevia as a sweetener, but instead I sweetened it with dates.

Ingredients:

  • 200 grams of roasted cashews or merey.
  • 6 pitted dates.
  • 250 ml of plant-based milk (I used almond milk).
  • 1 tablespoon of vanilla extract.Image from thread


Let's get to the preparation:

Start by soaking the cashews and dates in the plant-based milk.

Place in the refrigerator for at least 6 hours.

After this time, we'll notice how the cashews have absorbed some of the milk.

Then we pour everything into the blender, pausing gently to prevent the appliance from suffering any damage.

Add the vanilla, and if the mixture is too thick, you can add a little water or more plant-based milk, but only a little.

Blend until you get a very creamy and fairly smooth mixture.

Now we use our ice mold; I used a plastic one.

Pour the cashew mixture into the mold. You can use a spoon to help. I poured the remaining mixture into a smaller ice cube tray.

Place it in the freezer until the next day so that the preparation is completely frozen.

The next day, we have our frozen cashew cubes ready to process.

Now, we pour these cubes into the food processor. Be careful with this; you should use a very powerful one, preferably not a blender.

Let's start processing our preparation and you can help yourself with a spoon. Always take breaks and check how our ice cream is turning out.

Saludos querida comunidad vegana 💚

Hace ya un buen tiempo estuve buscando una receta de Helado vegano con sabor a Vainilla, pues ese siempre ha sido mi sabor preferido, pero como ya todos sabemos, normalmente los ingredientes de los Helados son ricos en lácteos y trato de evitarlo lo más que pueda.

Las recetas que pude ver por internet generalmente las veganas son hechas con Banana y también con Anacardos, este último llamó mi atención porque ya he probado el de Banana con Vainilla, que por cierto es delicioso, pero me propuse hacer este con Anacardos, tuve que esperar unas cuantas semanas para poder hacer la receta porque ¡los Anacardos son realmente costosos!

La receta original dice, que es Helado de Vainilla, pero ahora que he preparado la receta y la he probado, me hago la interrogativa, ¿es de Vainilla o Anacardos? porque si les soy sincera el sabor que más predomina es el Anacardo, aunque lleve vainilla.

Lo que más me gusto de esta receta fue su cremosidad, y si te encantan los Anacardos como a mí, seguro te va a encantar, eso sí, me parece muy costoso porque no es tan rendidor.

Como siempre le hice algunos cambios a esta receta, la receta original lleva como endulzante Stevia liquida, en cambio lo he endulzado con Dátiles.

Ingredientes:

  • 200 Gramos de Anacardos O Merey Tostados.
  • 6 Dátiles sin semilla.
  • 250 Ml de Leche vegetal, he usado Leche de Almendras.
  • 1 Cucharada de esencia de Vainilla.

Vamos con la preparación:

Empezamos remojando los Anacardos y los Dátiles con la Leche vegetal.

Llevamos al refrigerador por unas 6 horas mínimas.

Pasado ese tiempo nos daremos cuenta en como los Anacardos adsorbieron parte de la Leche.

Luego echamos todo en la licuadora, haciendo pausas suaves para que nuestro artefacto no sufra.

Añadimos la Vainilla y si la mezcla está muy espesa puedes agregar un poco de Agua o más bebida vegetal, pero solo un poco.

Licuar hasta obtener una mezcla muy cremosa y bastante lisa.

Ahora usamos nuestro molde para hacer hielo, yo he usado uno de plástico.

Vertemos en el molde la preparación de Anacardos, te puedes ayudar con una Cuchara, la mezcla que me quedó la he vertido en un molde para hielo más pequeño.

Metemos al congelador hasta el siguiente día para que nuestra preparación quede bien congelada.

Al día siguiente ya tenemos nuestros cubos de Anacardos bien congelados, listos para procesarlos.

Ahora echamos estos cubos en el procesador, ojo con esto, debes usar uno muy potente, preferible no usar la licuadora.

Empezamos a procesar nuestra preparación y nos podemos ayudar con una cuchara, siempre hagamos pausas y verifiquemos como va quedando nuestro Helado.

Terminamos al ver que queda una textura muy cremosa y ligeramente firme.
