Hello Friends, How are you all ?? Wishing you all happy and prosperous life Ahead.

Today i would like to share the recipe - Turai(ridge Gourd), it is available all over india during summers but with different names like tori, jhinge, beerakhaya, dodka and Many more. Turai is green & healthy vegetables with numerous Health benefits. Usually these vegetables not liked by childrens and even Youth, but it is one of my favourite vegetable of Summers, the best part of this recipe the less ingredients you take, the more taste you will get. There is various way of preparing it but as always i prefer the simplest and easy way to get the more flavour & taste of it.

Ingredients ๐Ÿ“ƒ


โ€ข 1/2 Kg of Turai(ridge gourd).
โ€ข 1 chopped Onion.
โ€ข 1 Diced Potato.
โ€ข 1 tbsp of Oil.
โ€ข 1 tbsp of cumin seeds.
โ€ข Pinch of asafoetida.
โ€ข 1 tbsp of Turmeric Powder.
โ€ข 1 tbsp of Red chilli Powder.
โ€ข Salt to taste.

This is redge gourd, common indian summer vegetables available almost all over the india. It is healthy to have as it numerous Benefits like it is rich in fiber and low in calories,easy for digestion system. even it helps to regulate blood sugar levels.

Wash the turai well to remove the dirts & chemical s, peel it off.

Chopped as shown in the picture.

Heat the oil in the kadai/pan, then add Cumin seeds & asafoetida, wait untill seeds start crackling.

Now the diced Redge Gourd, potato & Onion all together.

Now add the indian spices - Turmeric, Red chilli powder & Salt, one after the another.

saute on low flame until the spices turn aromatic. Cover and cook for 10 minutes on medium flame or until the turai is cooked well. As it begins release juice, Cook untill pototes get Soft, as it take more time to get soft.

Your Ridge gourd is ready to serve, pair it with Indian breads like paratha or Roti, even you can taste it with rice.
