Tasty Carrot & Water Yam Fritters.

Hello everyone, welcome to my blog. It's a beautiful Saturday morning, and I believe that we have all got awesome plans for the weekend.

In this post, I will take you through the process of making one of my favorite snacks in a vegan style and believe you will love it. The very first time I had this was quite memorable, and it's something I bless myself with once in a while, most especially when the craving sets in.

You can barely find the vegan version of this snack, and I didn't regret giving it a try. It automatically means being a vegan doesn't deprive you of having delicious snacks as well.

This snack is called carrot and water yam fritters. It's easy to prepare, very affordable, and healthy as well.

  • 1 kg of Water yam (Dioscorea alata)
  • 4 pieces of small carrot.
  • 14 pieces of red pepper.
  • 3 balls of small onion.
  • Half tablespoon ginger seasoning
  • 0.5l of Groundnut oil.
  • Half teaspoon of salt

  • I started by cutting the water yam into small pieces.
  • I peeled the back of the water yam, ensured all dirt was properly removed, and kept them in a plastic bag containing water.
  • I rinsed the yam thoroughly in the clean water and went on to grate it with a grater. I used the smallest hole on the grater so the wateryam texture will be smooth.

After grating the water yam completely, I washed the grater and rinsed the carrots in clean water.

  • I grated the carrot as well and kept it aside.

  • Finally, with processing the recipes, I chopped the onions and pepper on a board before going on to the next step.

With all the ingredients processed, I am not far from enjoying my tasty carrot and water yam fritters.

I took the bowl containing the grated water yam.

  • I added the chopped onions and pepper.

  • I added the grated carrots.
  • I added half a tablespoon of ginger seasoning.
  • I added half a teaspoon of salt.
  • I took my turning stick and started mixing; it would have been a lot easier if there was electricity to power my portable mixer.

  • I mixed the ingredients thoroughly until they all blended well into each other.

I set the mixture aside and rinsed my frying pan.

  • I placed it on the burner and allowed it to heat before turning my groundnut into the frying pan.

When the groundnut oil had heated well, I reduced the heat from the burner because I do be frying on low heat.

  • I took a small quantity of the mixture with my clean hand, I made sure it had a smooth texture and just put it in the hot groundnut oil.

  • I repeated the process until my frying pan was filled up.

  • I started turning the mixture in the pan after 30 seconds to prevent them from sticking to the pan, and immediately both sides turned golden brown.

  • I started removing them from the hot oil.

  • I transferred them from the hot oil into a plastic sieve to drain any excess oil.

  • I repeated the process until I exhausted the mixture and my snack was ready.

The carrot and water yam fritters are spicy and very delicious. I have seen people take pap, custard, and others with this snack, but I prefer eating it alone.

It's more satisfying serving it alone, especially when it's still warm.
