Simple warm pumpkin soup for cold weather.with Norwegian vegan flatbreads.
Hello, friend, vegan lovers, and community Greetings. From yesterday the weather was extremely windy and the temperature is getting low. It is dropping down to around 6 C now. I didn't want to go shopping to buy more vegetables, just made soup from pumpkin which we had from Halloween time.

Ingredients :
1/2 small pumpkin 700 grams
3 small onions
4 cloves of garlic
1 tbsp olive oil
1 ts thyme
1 ts oregano
1 ts salt
1 ts black pepper
2 tbsp pumpkin seeds
1 stalk parsley
1 slice of lemon
1 pinch of turmeric
1 pinch of cumin powder
1 tbsp tahini sauce or paste.

Peel the pumpkin and cut it into small pieces.

Image from thread Roughly cut onion and peel garlic cloves.

Image from thread In a saucepan add 1 tbsp olive oil.

Image from thread When oil gets hot add thyme and oregano.

Image from thread Add onion and garlic.

Image from thread Saute onion and garlic until translucent.

Image from thread Add salt pepper and frozen lemon slice.

Add 2 and a half cups of water and cook it until the pumpkin gets softer.

When the pumpkin is cooked

Blend it using an immersion blender/mixer.

The soup is ready but the color is dull.
Image from thread add a pinch of turmeric powder for color.
Image from thread Pinch of cumin powder. cook it for 2 minutes.

Image from thread In the water dissolve some tahini paste.
If you have tahini sauce, don't need to mix water, use the tahini sauce directly 1 tbsp. stir it well.

Pour tahini into the soup, stir it well, and cook another 2 minutes

Image from thread Serve with bread and garnish with some roasted pumpkin seeds and chopped parsley
