



PEARL MILLET
Hello, friends, food lovers, and community greetings. today I introduce you to a very unique grain called Bajara/Bajari in my region in India and English known as pearl millet. As I practice Ayurveda, people always ask me about different diet plans lactose-free, gluten-free, and vegan. and always give them tips and tricks/advice according to their Dosha/body type constitution.
Recently i had one client/patient who has a western grain allergy, and can't eat this and that. I suggested she use finger millet horsetail millet, or pearl millet. and suggested some recipes.
After came home I found some pearl millet in the pantry and thought about sharing this recipe with my friends, and lovely community.
A little bit about this pearl millet
Known as a superfood in Ayurveda.
They are rich in fiber, protein, vitamins, and minerals. Unlike rice, millets have a lower glycemic index, making them better for blood sugar control. Additionally, millets are gluten-free and have a higher antioxidant content Pearl millet is packed with essential vitamins and minerals. It is a notable source of B vitamins, especially B3, and B6, which play vital roles in energy metabolism and brain health. The grain is also abundant in minerals like magnesium, phosphorus, and iron, all of which are crucial for overall well-being.

Here we start making pancakes from Pearl millet
ingredients for about 8 pancakes:
1 cup millet
1 ts salt
2 ts any oil

Clean and wash pearl millet two or three times and soak it in water for about 4 hours.

After 4 hours drain the water and pour the millet into a mixer jar for grinding.

To get a fine paste is important to add water a little at a time.

After the millet cracked I added additional water.

Gradually adding the water grind them to fine paste.

The paste should coat the spoon. Cover and keep in a warm place for about 6 hours

After 6 hours you can see how nicely it has naturally fermented.

Stir the batter and add salt.

Stir it well. It is ready to make dosa/pancakes

Warm skillet or pan brush a few drops of oil and spread 1 ladle of batter on the pan using the back side of the ladle to spread and adjust the thickness of the dosa/pancake.

After 2 minutes flip the dosa/pancake and cook the other side.


The soft and delicious dosas/ pancakes are ready to eat how you want.
I used brown lentils.
They also have many benefits for health.
Full of fiber and contains calcium, potassium, folate, and iron lentils also provide teeth and bone health. heart health. blood sugar level. weight loss agent, eye health. good skin and immunity system.
Making brown lentil curry with vegetables.

Ingredients:
1 cup washed and soaked brown lentils
2 small carrots
1 tomato
2 potatoes
2 small eggplants/aubergines
few coriander sprigs
1 onion
small piece of broccoli bone.
1 vegetable bullion
1 ts salt
1 ts chili powder
1/2 ts turmeric powder
1 ts garam masala
1 ts ginger garlic paste.

clean and chop all vegetables

In the pressure cooker put soaked brown lentils and and chopped vegetables.

Add 1 vegetable Bullion.
Pour in some water and cook until lentils turn soft probably 2 blasts

After it is cooked keep aside.

Chop onion and coriander ginger garlic finely.

Heat a pan and add 1 ts oil.

Add onion and stir it for 2 minutes.

Add ginger garlic paste. Stir for 1 minute

Add all spices and salt.

Mix well for a minute. It will have a smoky aroma.

Pour cooked lentils and vegetables into the spice mixture.

Add chopped coriander.

Cook it for 2-3 minutes.
Use it with rice, rice pancake, millet pancake, or any bread.

With pearl millet dosa.
