Greetings, dear friends and vegan food lovers. It’s been a while since I’ve stopped by here, and I’m glad to be doing so on such an important date—the 5th birthday of a community that opened its doors to me and welcomed me with such warmth. A birthday without cake isn’t really a birthday, which is why I’m bringing a small cake that combines two of my favorite flavors: coconut and chocolate.

The truth is, this combination surprised me in every way. This is the second time I’ve made a cake, and the first time I’ve made a vegan one—and without an oven, too. The recipe is very simple; I used María cookies for the crust. Fortunately, the brand I found doesn’t contain any animal-derived ingredients, so I was able to use them without any problems in this recipe. I filled the cake with a cream made from coconut milk, cocoa, cinnamon, and sugar. To decorate the top layer of the cake, in addition to the cream, I used several sliced strawberries.

I extracted the milk from a fresh coconut, although I skipped that step in the recipe because I've shown how to do it before. The other step was crushing the cookies for the crust and for decoration; I did it by hand, but it didn't take any time at all. Once the filling is ready, the recipe is practically done—all that's left is to assemble the cake.

Ingredients

  • 24 Caledonia Maria-style cookies to assemble the cake
  • 20 Caledonia Maria-style cookies for the cake base
  • 8 Caledonia Maria-style cookies for decoration
  • 3 cups coconut milk
  • 5 tablespoons cornstarch
  • 6 tablespoons coconut oil
  • 1 teaspoon cinnamon
  • 2 teaspoons cocoa powder
  • Sugar to taste
  • 2 strawberries

Preparation

-1.- Crush the cookies until they form a fine powder. Place the crushed cookies in a plastic bag and tap the bag gently but firmly

2.-. Prepare the cake crust. Place the crushed cookies in the bowl where you’ll be making the cake, add 6 tablespoons of coconut oil, mix well, and press the mixture firmly into the bottom of the pan. Let it chill in the refrigerator for 30 minutes.

3.-.In a pot, add the two cups of coconut milk, the cornstarch, the cinnamon, and the cocoa powder.

  1. Add sugar to taste and pour everything into the blender. Once all the ingredients have been blended into a smooth mixture, return it to the pot and cook over medium-low heat, stirring constantly, until it thickens. Let it cool to room temperature.

  1. Assemble the cake. Pour one cup of coconut milk into a bowl and dip the cookies in it. Then, arrange them on top of the previously chilled cookie crust, filling in any empty spaces as you go. Next, spread the cocoa and coconut cream over the cookie layer and continue alternating layers until you’ve used all 24 cookies. Cover the final layer with the cream. Refrigerate for 4 hours.

6.- Once the cake has chilled for the required time, we’ll proceed to decorate it. We’ll cut the strawberries—which have been washed and hulled—to form a flower in the center, then place a gold “Happy Birthday” sign on top, and finish by sprinkling crushed cookies over the cake.

Dejamos enfriar a temperatura ambiente.
