Greetings dear friends, welcome to my blog. Today I am once again joining the weekly contest Qurator's: Hive Top Chef! | Beans. This week's star ingredient is beans. I had originally planned to use white beans for this recipe, but when I went to the supermarket, they only had black and red beans, so I decided to go with white beans instead. Although beans go very well with pork, I put a different spin on this bean dish by using a very tasty seafood ingredient: shrimp.
My shopping trip this week was a bit of a hassle, but despite that, it turned out to be a success—just like this recipe. I had to go to my favorite fishmonger, but with so many things going on and no car, I gave up. At the same supermarket where I found the white beans, I bought a tray of shrimp in the shell, a little over 250 grams. I didn’t use them all—barely half.



Ingredients
- 130 g shrimp (in the shell)
- 17 g green bell pepper
- 3 sweet peppers
- 10 g chives
- 10 g garlic chives
- 3 cloves of garlic
- 3 grams of cilantro
- 1 egg
- 80 g potato
- 60 grams carrots
- 1 teaspoon paprika
- 1 teaspoon of cumin
- 1 teaspoon of dried oregano
- Black pepper to taste
- Salt to taste



Preparation
1.- Rinse the beans that you soaked the night before. Place them in a pot with enough water and cook until tender.

2.- Cook the egg for about 8 minutes after the water comes to a boil. Once the time is up, let it cool to room temperature.

3.- Wash the scallions, leeks, green bell pepper, and chili peppers. Remove the seeds and stems from the sweet peppers, as well as the skin from the onion and garlic. Chop everything very finely and add it to the pot with the beans.



4.-. Peel and wash the potato and carrot, then cut them into very small cubes.


5.-. Add the diced potato and carrot to the beans, stir, and season with salt to taste, cumin, pepper, paprika, and dried oregano. Bring to a boil and let the vegetables cook.

6.-. Clean the shrimp, removing the heads, tails, shells, and veins. Leave one whole for garnish.


7.-. Rinse the shrimp heads and add them to the beans. Let them simmer for a couple of minutes to infuse their flavor, then remove them. Next, add the shrimp and the cilantro, which has been washed and chopped. Let the beans boil for about 3 more minutes. Adjust the salt to taste and turn off the heat. Let the stew rest for a couple of minutes before serving.


8.-. We serve our white bean stew with shrimp. Finally, we peel the hard-boiled egg, slice it, and add it to the plate.
