Greetings dear friends, welcome to my blog. Today I am once again joining the weekly contest Qurator's: Hive Top Chef! | Lamb. Lamb is a delicious meat; I don't usually buy it, but I've eaten it a couple of times, once for a Quarator challenge to cook with curry. This time, I prepared lamb with coconut milk and vegetables, including mushrooms.

I found lamb at a good price at the supermarket, as well as dried coconut, and fresh mushrooms at a greengrocer's. It's the first time I've bought them; I always used to get them canned. I looked online to find out how to clean and cook them—it's all very simple, and they'll be ready in just 5 minutes. I apologize for the photos; they're a bit dark. I've had problems with the electricity; it's been going out a lot lately, and my kitchen is dark, so the lighting was poor.

Ingredients

  • 500g lamb
  • 80g fresh mushrooms
  • 1 potato (135g)
  • 1 carrot (115g)
  • 57g finely chopped mixed seasonings (red bell pepper, leek, scallion, and sweet pepper)
  • 1 clove garlic
  • 2 teaspoons paprika
  • 1 teaspoon dried oregano
  • Salt to taste

Preparation

1.-. We wash the lamb pieces and season them with salt to taste and dried oregano. We let them marinate for approximately 30 minutes.

2.- After some time, we place the lamb in a pot with a glass and a half of water and cook it over medium-low heat for approximately 45 minutes to tenderize it.

3.-. We peel the potato and carrot, wash them and cut them into pieces.

4.- We add the pieces of potato and carrot to the already tender lamb, along with the seasonings and the chopped garlic clove.

5.- We pour in the coconut milk and season the stew with salt to taste and paprika. Mix and let cook for approximately 7 minutes.

6.- We wash the mushrooms and slice them, then add them to the lamb stew. We cook for another 5 minutes and adjust the seasoning.

We served it; I accompanied this stew with white rice.
