Greetings dear friends, welcome to my blog. Today I am once again joining the weekly contest Qurator's: Hive Top Chef! | The Bean Challenge. One of the most common ways to eat beans is in soup—which, by the way, is my favorite—and they’re also great in a stew served with rice; my mom used to make that dish all the time. However, I think a bean challenge would be to make something really different and fun—not to mention how nutritious it can be.
I decided to make something delicious and gluten-free with my favorite beans—well, one of them—so I used white beans.


While I was at the supermarket, I found the ingredients I needed to make a white bean salad, plus a perfectly ripe avocado to add the finishing touch to this dish. It’s the first time I’ve made a bean salad, and I was delighted with the result. I won’t say any more—check out the recipe and let me know what you think in the comments.
Ingredients
- 1 cup white beans, soaked in water overnight
- 43 grams of tomato
- 28 grams of green bell pepper
- 40 grams of zucchini
- 60 grams of ripe avocado
- 40 grams carrot
- 3 teaspoon extra virgin olive oil
- 1 teaspoon of white vinegar
- Salt to taste


Preparation
1.- Peel the carrot, wash it, and wash the zucchini as well, then cut everything into very small cubes.



2.- Preheat a skillet with olive oil and sauté the carrots, seasoned with salt to taste. When they have softened a bit, add the zucchini and continue cooking until both vegetables are tenders. Set aside..

3.- Wash the tomato and green bell pepper, remove the seeds, and cut everything into very small cubes. Set aside..

4.- Let's make the vinaigrette. In a bowl, add two teaspoons of extra-virgin olive oil, one teaspoon of white vinegar, and salt to taste. Mix well..

5.- In the bowl where we prepared the vinaigrette, add the bell pepper and tomato and mix well. Next, add the zucchini and carrot. Then, add the white beans and mix again. Finally, cut a slice of avocado and dice it..

We served a colorful white bean salad, a delicious and nutritious dish..
