Greetings dear friends, welcome to my blog. Today I am once again joining the weekly contest Qurator's: Hive Top Chef! | The Crunch Factor. Eating crispy foods is delicious; that crust that forms when they come into contact with oil really brings out the flavor of the food. A few days ago, I made a little snack: chickpea meatballs. Chickpeas are one of my favorites—I love them in soup, but also in the croquettes they put in falafel—because I really enjoy vegan food.

You can really turn chickpeas into something delicious with a nice crunch. Some people use them raw—once boiled, they’re soft, which makes them easier to grind. I combined them with seasonings or vegetables and a few spices, including cumin, which is a must. To give them texture, I added rolled oats. The result was superb: delicious meatballs, packed with fiber and protein, but above all, crunchy.

Ingredients

  • 80 grams of finely diced vegetables (leek, scallions, bell pepper, and sweet chili pepper)
  • 1 clove of garlic
  • 1 cup rolled oats
  • Olive oil, as needed
  • 2 teaspoons of cumin
  • 2 teaspoons of paprika
  • Salt to taste

Preparation

1.- Wash the chickpeas and boil them in enough water until they are tender. Let them cool to room temperature in the same water used for cooking.

2.- Once they have cooled, place them in the blender with a little water from the cooking liquid. Do this gradually (don’t blend everything at once) to avoid overworking the blender and to achieve a smooth mixture. Add the garlic and seasonings as well.

3.- Add salt to taste, paprika, and cumin. Blend well, then gradually add the mixture to a pot.

4.- After blending all the chickpeas, we add the rolled oats to give the mixture some consistency so we can shape the meatballs. We mix everything together thoroughly.

5.- Shape the meatballs and fry them over medium-low heat until they're golden brown on all sides. Then, place them on paper towels.

We served the chickpea meatballs, which were really crispy, and I served them with a parsley sauce—delicious! What would you serve them with?.
