Hey there, food lovers! πŸ€—πŸ€—

So this morning, I found myself in a bit of a kitchen adventure.

I woke up kinda late to find that my siblings has left for school already, and my mom for work, but there was a text message from her, asking me to prepare some vegetable stew with assorted meat and rice.

While cooking this dish might have been unplanned, my love for cooking knows no boundaries, so why not 😌πŸ€ͺ.

Now, going to the freezer, I found some really fresh vegetables there (Ugwu Vegetable, Garden egg leaf and Shoko) .

It's been real long since I last ate Vegetable stew, so I was excited about making it, and finally eating it.

And while most people will prefer preparing this dish with groundnut oil, I knew what will truly make this dish authentic, so I used palm oil (Nigeria red oil). There's something about red oil for me, it holds a special place in my stomach πŸ˜‚πŸ˜‚.

My stomach growled in anticipation. No time to waste - it was cooking time.

🌸 Vegetables (I used ugwu vegetable, Garden egg leaf and Shuko)
🌸 Red oil (palm oil)
🌸 Fresh tomatoes
🌸 Fresh pepper
🌸 Assorted meat
🌸 Chopped Onions
🌸 Salt
🌸 Maggi
🌸 Spices (curry)
🌸 Rice

🌸 You'll need to start by getting your assorted meat ready. In this case, my mom already boiled the meat the day before, and stored in the fridge, so it was a lot easier for me.
Wash and season the meat. Some meats are usually harder than some, so it's advisable to boil the harder ones first, before adding the softer ones, and then allow all to boil till tender on medium heat. Then set aside.

🌸 When the meat is fully cooked, you can either fry it till its crispy and golden, or leave 'em be (which is what i did), and also, reserve the meat stock because we'll be using it later.
Then you'd want to blend your fresh tomatoes, pepper and onions together and also keep aside.

🌸In a sauce pan or a pot, heat the red oil and toss in some chopped onions until the onions softens, releasing their sweet aroma.
Then it's time to pour in your blended tomatoes, pepper and onions, your assorted meat, 2 knorr cubes, salt, curry powder and whatever ingredients you'd like to add (like crayfish, smoked fish).

🌸 When it comes to adding the meat stock, you have two options: pour it in while adding other ingredients or let your stew boil for a little while before adding the stock.
I opted for the second, allowing the stew to boil for a bit before introducing the meaty flavour to it πŸ˜‹ πŸ˜….

🌸 Last, but certainly not least, the main ingredients of the dish - the vegetables.
After thoroughly washing the vegetables, in other to preserve their freshness, we add them to the pot last, after the stew has been boiling for a while.
This way, they keep their cripness and freshness to the dish when its finally served.
I definitely do not want mushy veggies in my stew πŸ˜‘πŸ˜….

🌸 With the final addition of the vegetables, your stew is almost ready.
Leave to boil for sometime till it reaches its full potential. Once satisfied, give it one last taste test, and if needed, adjust the seasoning by adding more salt and Maggi as required.
Serve hot with steaming white rice, yam and trust me, your palate will thank you πŸ˜‚, get ready for a soul-satisfying meal πŸ˜‹ 😜 .
