A SIMPLE POTATO BREAKFAST

 As a big fan of food content and cooking. I have seen quite a lot of potato recipes. However, many of the recipes include one or two ingredients I’m not familiar with or are not readily accessible due to  country differences. With all these videos and ideas, I was inspired to create this simple and easy potato breakfast using ingredients that are widely available.

 I vividly remember the first time I tried this recipe. It was on a frustrating day with a bad network connection, so I just decided to play around in the kitchen. To my surprise, it turned out amazing and instantly made my day better! And I thought of sharing it here.

INGREDIENTS  

  • 4 medium sweet potatoes 
  • 2 medium eggs 1 teaspoon of pepper and onion mix or one scotch bonnet pepper and small onion (finely chopped) 
  • A pinch salt of seasoning cube/ bouillon(or preferable spices)
  • Salt (to taste) 
  • Vegetable oil (for frying) 
PROCESS

Prepare the Potatoes

  • Rinse the potatoes thoroughly to remove excess dirt.

  • Peel the potatoes and cut them into small pieces.

  • In a pot or pan, add water and some salt to taste.

  • Place the cut potatoes in the water and allow to boil for 10-15 minutes, depending on the heat level, until soft.

  • Once cooked, remove from heat and drain the water and mash the potatoes with a fork or a masher.

Prepare the Egg Mixture

  • Crack the eggs into a small bowl. 

  • Add a pinch of salt, a pinch of seasoning cube( or preferred spices), and add the pepper mix or chopped scotch bonnet pepper and onions.

  • Mix everything well, until evenly combined.

Form and Fry the ‘Potato pancakes’

  • Take a handful of the mashed potatoes and shape them into small balls. Flatten each ball into a mini pancake shape.

  • Dip the flattened ‘potato pancakes’ into the egg mixture, ensuring they are well coated.

  • Heat the vegetable oil in a frying pan.

  • Fry each coated pancake on one side until golden brown and crispy then flip to cook the other side.

  • Repeat for all the mashed potatoes.

 Serve and Enjoy

  • Serve your crispy ‘potato pancakes’ hot and enjoy!

  • For an extra touch, pair them with spicy pepper sauce or your favourite dip/sauce.
