Fruity coconut rice

I believe there's always room for creativity in everything.
I was in the mood for something unique and refreshing, so I decided to experiment with fruity rice recipe, I saw one with just pineapple and coconut online, so I decided to make mine but adding other fruits too. Combining pineapple, coconut, and fresh vegetables, I aimed for a balance of sweet and savory flavors. The result was just as I hoped—rich, colorful, and really delicious.

I'll take you through how I made it in this post.

As you can see below in the photos, this fruity rice turned out just the way I wanted it, very colorful , nice and delicious.

Here are the ingredients I used for it:

  • 3 cups of rice

  • Fresh tomatoes 7 PCs

  • 1 handful of small Carrots

  • 1 cucumber
    1 medium size coconut

  • 1 small bunch pineapple

  • 1 medium sized onions

  • 2 cooking spoon vegetable oil

  • 5 green peas

  • 1 handful of chili pepper

  • 1 table spoon dried ground pepper

  • 1 tablespoon mixed natural ground spices

To make this I first get the fruits ready to prepare them.
I cut the pineapple in half and remove the fruits inside and set it aside. I also set aside the carrots and cucumber

Next I blended the pineapple, carrot and coconut together. After blending I sieved it and set the juice aside

Next I chop the onions, tomatoes, green peas cucumber and remaining carrots. Also I grate the pepper and set aside

While at it I was parboiling the rice so after the rice was done parboiling I sieved it and washed it properly.

Next I put a pot to heat, and added my vegetable oil. Added onions and then tomatoes and let it saute for a few minutes

Then I add the pepper to it. Added the mixed spices, the black pepper and kept stirring

Next I poured in the juice I set aside and stirred everything in

At this point I pour in my rice stirred and let it settle for a while. Then I poured the chaff from the coconut and carrots that were grated and I stirred everything together. You can add a little water if the juice didn't cover the rice

Then I covered the pot to let the rice cook for a few minutes too.

When the water is a bit dried and the rice is soft, I add the peas, the carrots and the cucumbers so they make the food a bit more tasty and crunchy.

And after a few seconds I stirred it all in together and rice was done ! I served the rice in a wah I describe as creative using the shell of the coconut and of the pineapple

It's always a thing of joy to see that you've achieved what you so wanted, that us how I felt with this meal. I loved how delicious it turned outz, I love the texture the colors and everything about it was so good.

The sweet and savory combination of fresh fruits and vegetables, makes it not only a tasty meal but also a fun, creative experience and I hope to do this again sometime.
