Delicious Pineapple Cake
Hello, my dear and valued Hivers who read my posts in the @hivefood community. It’s a pleasure to greet you all. I invite you to stop by and check out my post for today. Welcome, everyone, to my blog.

Today I’m stopping by this community to share a recipe for a delicious cake that everyone will love: the famous and delicious pineapple cake, also known as “impossible cake.” Pineapple cake is a classic dessert known for its incredible tenderness and the unique combination of the sweetness of the sponge cake and the citrusy touch provided by the pineapple. It’s usually made with a caramel glaze on the bottom and pineapple slices, which give it a very juicy texture.

One of my daughter’s friends and classmates has a birthday today, so my daughter asked me to bake her a pineapple cake, since she loves it—just like her family does. I got up pretty early today to go buy the pineapple—I didn’t have any in my pantry. I was, as we say in Creole in my city, “carrerita,” because, as everyone knows, we’re dealing with daily power outages that happen without any warning, and all my kitchen appliances are electric. However, I managed to make it without any problems—they didn’t cut the power this morning, so the outage will most likely happen tonight.

I went over at noon and took it to her house, since my daughter is on call. At lunch, they cut into it and sang “Happy Birthday” to her; she told me that her whole family loved it.
Now, here are the ingredients I used and the step-by-step instructions.
Ingredients
- 2 1/2 cups self-rising flour
- 2 cups of sugar
- 3 medium eggs
- 150 grams of butter
- 1/2 cup of natural pineapple concentrate
- 4 medium slices of pineapple
- a pinch of salt
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of ground cinnamon

Caramel
- 3/4 cups sugar
- 8 tablespoons warm pineapple concentrate
- 18-centimeter-wide by 7-centimeter-tall mold
Preparation
The first thing I did was remove the core from the pineapple slices, then blend a large slice with 1/4 of water to make the concentrate. Then I poured some pineapple concentrate into a small saucepan to heat it up. I took a pot, placed it on the stove, added the sugar, and stirred until all the sugar had dissolved. I turned off the heat and poured the mixture into the pan, swirling it around to coat the sides. I arranged the pineapple slices on top and set it aside until the cake batter was ready.

Then I began preparing the cake: I beat the butter and sugar together in a bowl for 5 minutes, gradually added the egg yolks, beat to combine, and at the same time added the pineapple concentrate along with the sifted flour, baking soda, salt, and ground cinnamon.
Finally, beat the egg whites until stiff peaks form, add them to the bowl with the mixture, and fold in gently. Pour the batter into the pan containing the caramel and pineapple, place it in the oven, and bake for 1 hour. Turn off the oven and unmold the cake while it’s still warm, since if you let it cool, it will stick to the pan—and that’s it!
