Delicious breakfast: Eggs with vegetables, cottage cheese with yogurt, and arepas.
Good evening, dear friends who read my posts in the @hivefood community. It’s a pleasure to greet you all. Welcome to my blog.

Today I’m back here on the blog to share a delicious and nutritious recipe that I made on Sunday for breakfast: eggs with vegetables, cottage cheese with Greek yogurt, arepas, and a cup of coffee.

It was a simple yet nutritious breakfast to start the day. I prepared it with great care for a group of sisters in Christ who were on a trip and also gathering as a family in the city of Mérida.
The eggs were prepared with vegetables such as carrots, sweet peppers, cilantro, scallions, and tomatoes. It really is a breakfast that gives our bodies energy, while also being healthy because it contains the necessary protein found in eggs and milk—since cottage cheese is made from milk, which is an animal protein. We also have the vegetables, which provide us with minerals, antioxidants, beta-carotene, and almost all the vitamins necessary for our bodies to function properly.

Now I’ll list the ingredients for this recipe and the step-by-step preparation instructions, which are very simple, easy, yield a large portion, and are economical to make.
Ingredients
- 6 medium carrots
- 1 white onion
- 9 ripe tomatoes
- 15 eggs
- 5 sweet peppers
- cilantro and green onions
- 5 tablespoons vegetable oil
- Salt to taste
Preparation
The first thing I did was wash the tomatoes and vegetables very thoroughly. Then I finely chopped the vegetables (tomatoes, onion, green onions, sweet peppers, and cilantro), added the oil, and began sautéing them, stirring constantly. At the same time, I prepared and cooked the arepas—40 of them, since that was the number of people having breakfast. Some of them burned because I wasn’t familiar with the stove; I turned the heat up too high.

At the same time, peel the carrot and grate it, then add it to the sautéed mixture. Stir for 3 minutes or until it forms a sort of sauce, and finally add the beaten eggs. Stir again for 3 more minutes, and it’s ready to serve.

I also prepared 300 grams of cottage cheese mixed with 100 grams of Greek yogurt to go with the eggs and vegetables, along with a cup of black coffee that I made as well. I can assure you that everything turned out delicious.

That’s it for this post—I hope you enjoyed it, and I’ll see you next time with a new recipe.
