Delicious Black-Eyed Pea Soup
Good evening, my dear and valued Hive members who take the time to read my posts in the @hivefood community. Welcome, everyone, to my blog.

Once again, I’m stopping by this community—which I’m very happy to be a part of—to share a delicious, easy, nutritious, and quick recipe for black-eyed pea soup with pumpkin, vegetables, and chorizo criollo.

You know, it’s been a long time since I’ve made this kind of bean dish. Today, while going through the pantry, I found a package of them. I also checked the fridge and saw that I had all the ingredients I needed to make a delicious soup with these beans—and best of all, I had chorizo, which adds that great touch to bean soup or any kind of bean dish. I served it with boiled plantains, white rice, and a glass of guava juice.

Now I’ll list the ingredients and the step-by-step instructions for this soup.
Ingredients
- 400 grams of black-tipped beans
- 130 grams of butternut squash
- 1 chorizo
- 1/2 tablespoon of soy sauce
- seasonings (cilantro, leek, celery, sweet pepper, white onion)
- Salt and pepper to taste
- 4 cloves of garlic, minced

Preparation
The first thing I did was wash the beans thoroughly. I placed them in the pressure cooker with water, let them cook for 45 minutes, turned off the heat, released the pressure, and checked them. Then I cut the squash into small cubes, along with the seasonings, and added them to the pot. I put it back under pressure for 30 minutes.

Once the 30 minutes are up, I release the steam from the pot and taste the beans to check both their flavor and texture. I add the chorizo and let them cook for 10 more minutes, then turn off the heat and plate the dish.

That’s all for now—I hope you enjoyed it. See you in my next post.
