Torta humedad de limón y mandarina [ESP/ENG]

Buenas noches amigos amantes del buen comer y del buen paladar que me leen en la comunidad de @hivefoo, espero que todos hayan pasado un excelente día, ya despidiendo el mes de junio, el cual personalmente no quiero recordarlo ya que nos dejo con una Venezuela enlutada. Hoy paso por acá para traerles una deliciosa receta que he preparado para el cumpleaños de una amiga y vecina a la cual aprecio mucho. Como ella ama los cítricos le prepare para su cumpleaños una deliciosa torta húmeda de limón y mandarina, con su cubierta interior de crema de limón, decorada con grajeas y crema de mantequilla. Su peso con todo y relleno fue de 1,580kilogramos.

Les comento que quedo muy esponjosa y suave con una humedad bárbara, super rica que al llevarla a la boca y morder la ración de pastel le salía un jugo demasiado bueno. Los invitados de mi amiga quedaron muy a gusto con este especial y delicioso pastel. Es tanto así que ya me encargaron dos pasteles tal y cual como este para el cumple de un señor y de una de las amigas de mi vecina. les informo que primera vez que le coloco mandarina a una torta y realmente el sabor es rico.

En este momento les voy a indicar los ingredientes que utilice y el paso a paso para la elaboración de este pastel.

Ingredientes

  • 4 tazas de harina de trigo leudante
  • *1/2 cucharadita de levadura granulada
  • 3 cucharadas de maicena o fécula de maíz
  • 350 gramos de azúcar refinada
  • 80 mililitros de jugo de naranja
  • 40 mililitros de jugo de mandarina
  • 30 mililitros o 1/2 taza de leche liquida + 1/2 cucharada de vinagre para hacer el butter milk
  • 3 huevos + 2 para el lemon court
  • 150 gramos de margarina
  • molde de 20 centímetros
  • Una pizca de sal
  • ralladura de una naranja y de una mandarina

procedimiento

Cremo en un bool la mantequilla con el azúcar, le agrego tanto la ralladura de limón como la de mandarina, sigo batiendo, le agrego las yemas de huevo una a una, y sigo batiendo con batidora eléctrica.

Luego de batir muy bien le agrego a la par la harina cernida, el jugo de naranja, el de mandarina y el butter milk que hice con la leche liquida y el vinagre, voy batiendo hasta unir todo los ingredientes.

Posteriormente bato las claras de huevo apunto de nieve, las agrego a la mezcla anterior, bato, agrego esta mezcla al molde, introduzco en el horno y dejo cocinar por 50 minutos.
retiro del horno, apago y dejo enfriar una hora para luego decorarla con una crema de butter crean sabor a limón, e iniciar el relleno con el limón court y por ultimo decorarla con la crema de limón y luego la relleno a la vez para finalizar decorandola con la crema de mantequilla. tanto la decoracion como la preparación del relleno no les voy a indicar el procedimiento, ya que en otras oportunidades ya los he explicado.

Today I’m stopping by to share a delicious recipe I made for the birthday of a friend and neighbor whom I care about deeply. Since she loves citrus fruits, I made her a delicious moist lemon and tangerine cake for her birthday, with a lemon cream filling, decorated with sprinkles and buttercream. The total weight, including the filling, was 1,580 kilograms.

I’ll tell you, it turned out really fluffy and soft, with incredible moisture—it was so delicious that when I took a bite, the juice just poured out. My friend’s guests were very pleased with this special and delicious cake. So much so that they’ve already ordered two cakes exactly like this one for a man’s birthday and for one of my neighbor’s friends. I’ll tell you, this is the first time I’ve added mandarin oranges to a cake, and the flavor is truly delicious.

Now I’m going to list the ingredients I used and give you step-by-step instructions for making this cake.

Ingredients

  • 4 cups self-rising flour
  • *1/2 teaspoon granulated yeast
  • 3 tablespoons cornstarch
  • 350 grams refined sugar
  • 80 milliliters orange juice
  • 40 milliliters of tangerine juice
  • 30 milliliters or 1/2 cup of milk + 1/2 tablespoon of vinegar to make buttermilk
  • 3 eggs + 2 para el lemon court
  • 150 grams of margarine
  • 20-centimeter cake pan
  • A pinch of salt
  • zest of one orange and one tangerine

Procedure

I cream the butter and sugar together in a bowl, add both the lemon and mandarin zest, continue beating, add the egg yolks one at a time, and continue beating with an electric mixer.

After beating the mixture thoroughly, I add the sifted flour, the orange juice, the tangerine juice, and the buttermilk I made with milk and vinegar all at once, continuing to beat until all the ingredients are well combined.

Next, I beat the egg whites until stiff peaks form, add them to the previous mixture, beat it all together, pour the mixture into the pan, place it in the oven, and bake for 50 minutes.
I remove it from the oven, turn off the oven, and let it cool for an hour. Then I decorate it with lemon-flavored buttercream, start by filling it with lemon curd, and finally decorate it with the lemon cream before filling it again, finishing with the buttercream. I won’t go into detail about the decoration or the preparation of the filling, since I’ve already explained those steps on other occasions.
