I am an indigene of Akwa Ibom State, and in my state, we have different local delicacies that are very nutritious to the body. We have afang soup, editan soup, pounded yams, bitter leaf soup, cocoyam soup, and many more to mention. All these are cooked with rich ingredients.

Bitter leaf Soup is my favorite:
Bitter leaf Soup is my favorite soup because of its bitter taste, and it's very rich for the body, it has an earthy flavour that I so much enjoy, especially when I finish eating the soup and I take water, it gives this unique taste in my mouth that I would always want to eat it every time, so I can feel the taste of it. I enjoyed it most with balanced ingredients like meat, ice fish, periwinkle, crayfish, fresh pepper, stock fish, waterleaf, and plenty of red oil. Finish this soup with correct eba or fufu, your life can't remain the same ๐. Very delicious.
The aroma of the food will invite people. And a lot of people, especially our Gen Z, don't know the benefits of this soup. They think that because it's bitter, they won't taste it or cook it. There are ways I can reduce the bitterness to a normal level for consumption.
I will teach you the steps to wash your bitter leaf:
First, buy the bitter leaf or pluck it from the branches. Get home slice the leaves or pound them with your mortar and pestle, put them out into a bowl, put a small amount of water, and scrub it for some minutes, squeeze it out, and put it in a small bowl. Pour the water by filtering it. Put another pot of water on and continue to wash it till the taste of the bitterness reduces to your satisfaction and then, slice it into smaller particles. Wash your waterleaf and start cooking your soup with your assorted ingredients and enjoy yourself.

To me, I like it so much. Not every time, that I will be consuming sugary things. Soups like this keeps your heathy and hearty for a very long time without any health challenges. What keeps our forefathers long, is a healthy intake of food. How I wish I had wings to fly to my hometown and collect all these delicacies for Kaduna State, because here, it's not enough like in my State. I am salivating now as if it's well-cooked and brought my way. ๐
