
In our Bengali culture, a festival or a special event means hot pola on the stove and a piece of Shahi chicken roast. But if that roast is not brought from a restaurant or a wedding, but cooked with your own hands. But his joy and satisfaction became double. Today, during the holidays, I spent some time in the kitchen and made my own chicken roast, and the cooking experience and eating feeling were truly extraordinary. The first step in cooking was to lightly season the chicken pieces with salt and lemon juice and fry them until golden brown. While the onion slices were slowly turning into a paste in the oil. Then the whole house was filled with a wonderful aroma. Then came the familiar combination of ginger, garlic, almond paste, yogurt, and hot spices. As the spices sizzled, oil floated to the top. Right then, I dropped the fried chicken pieces into the sea of spices. After keeping it on low heat with a lid, when the gravy of the roast thickened, Then I spread some ghee and green chillies on top. And that's it, the perfect Shahi Chicken Roast was ready.

When I finished cooking, when I arranged the roast on a plate, it looked so tempting that I couldn't help but take a picture, like the one you attached above, with a beautiful decoration of tomatoes in the middle and lemon slices around it. All in all, it looked like a restaurant. As soon as I put the first piece of roast in my mouth with hot polava, my heart was filled. The meat was so tender and juicy that it fell off the bone easily. The yogurt and almond butter gave the gravy a royal and thick texture that went perfectly with the polava. A wonderful balance of sweet, sour, and salty. There's a strange sense of satisfaction when you cook a complex or special dish with your own hands and it's perfect.
