Today I wanted to have soup, a delicious and natural broth to replenish my energy. I had in mind a chicken soup with a touch of garlic, mint, and cilantro. So I got to work, so I could treat myself and also please my family. The big surprise in this recipe was the zucchini, a unique touch to this soup for which I selected fresh chicken from the beneficiary of my kitchen, undoubtedly the best option for this dish because the flavor is different from chicken that must be thawed first, the amount of time it spent in the refrigerator before being purchased being unknown.

Ingredients:
-
6 pieces of chicken
-
100 grams of mint and cilantro
-
1 head of garlic
-
1 Chinese taro
-
3 yuccas
-
1/4 pumpkin
-
2 potatoes
-
1 carrot
-
1 zucchini
-
12 sweet jobitos peppers
-
2 onions
-
5 liters of water
-
Salt to taste

Procedure:
I love the variety of vegetables, which is why combining several of them gives the broth an extraordinary flavor. I started by chopping the yuca, since it takes the longest to soften and must be the first to go into the pot, which was waiting for it with 5 liters of water and a tablespoon of salt.
While this began to cook, I set about washing and peeling the potatoes, carrots, and taro. On this occasion, I kept the skins on the zucchini and squash, as they contain many vitamins and this would also prevent them from falling apart in the broth.

Next, I removed the seeds from the sweet peppers and chopped them into julienne strips. I also removed the first layer of the onions and chopped them in the same way.
I minced the garlic, leaving large pieces this time, as I wanted a more pronounced flavor.
I washed the chicken and set it aside to add later.
When the yuca was ready, I added the rest of the vegetables. I waited 15 minutes and added the chicken, stirring to blend the flavors. Shortly after, I added the seasonings. At this point, I tasted it and adjusted the salt.

When I turned off the heat, I added the garlic and the sprigs, which I had previously washed and chopped, removing the stems and roots.
The flavor and color were spectacular. I was pleased with the result, especially since I am cooking without seasoned salts or spices. I loved the combination of flavors and aromas. You could taste the fresh free-range chicken, and the vegetables were cooked to perfection.
