Next, I soaked the tomatoes in water, removed the seeds, and cut them into small pieces. Next, I peeled the carrot and chopped it into medium-sized pieces.

Then, in a pot, I sautéed the seasoning with a bit of oil, added a tablespoon of salt, and stirred constantly so it wouldn’t stick. Ten minutes later, I added the sliced sausages. I stirred again to let the flavors blend.

Once I felt the sofrito had reached the right consistency, I added the rice and two and a half cups of water, stirred, lowered the heat, and covered the pot so the steam could help with the cooking. It was ready in just a few minutes, and the result was spectacular; the addition of tomato intensified the flavors of the rice, which turned out fluffy and delicious.
