Loving greetings to hivers and vegan 🌱 friends. Hope your week is moving greatly with sound well being. My today’s recipe is a whole spicy vegetable for those of us who love to eat more of veggies in their meals especially when adding any carbohydrates to them like boiled potatoesĀ šŸ„”, pastaĀ šŸĀ or riceĀ šŸš.

The aim of this recipe is directed towards why we should eat more of vegetables and add just little carbohydrates in our meals if we must stay on light weights and stay healthy at the same time.

And the base of this recipe is fluted pumpkin , known as ā€œUGUā€ leavesĀ šŸƒĀ . This vegetable originates from West Africa , particularly NigeriaĀ šŸ‡³šŸ‡¬Ā where I came from. Its scientific name is Telfairai Accidentalis. This leafy 🄬 vegetable is a staple in Nigeria cuisine and and it is widely cultivated for its culinary and nutritional benefits.

Craving for vegetable lunch today due to time in my hands, I decided to prepare a delicious sauce from this vegetable with other ingredients that will boost the taste of this recipe so we can enjoy it even without adding any other dish to it if desires. Although here I added just a little boiled white rice to enjoy my crave.

This very vegetable is so versatile in the kitchen because it can be prepared in many other ways, like adding it to melonĀ šŸˆĀ seed soupĀ šŸ², into farmers potage of potatoesĀ šŸ„”Ā or yamĀ šŸ Ā and even as s blood 🩸 booster when squeezed together to yield out lots of water in form of juice.

Here I share with you the steps for this recipe

.# INGREDIENTS:

Full fresh bunch of fluted pumpkin leavesĀ šŸƒ
1 medium size of red onionsĀ 
3 hot red peppersĀ 
1 sachet of puree tomatoesĀ 
1/2 teaspoon of curry powderĀ 
1/2 teaspoon of thyme herb 🌿
1/2 teaspoon of saltĀ 
30 ml of pure vegetable oil

STEPS FOR PREPARATION:

First thing to do is I will pluck the leaves away from the stems as above.

Then wash it thoroughly with plenty of water leaving it in a basket for few minutes to drainĀ  Ā Ā as above .Ā

I will gradually slice all the vegetables .

Next is to wash and slice the onions and hot pepperĀ

And cut open the sachet puree to liquidize it using water.

To fry the vegetable, the electricity just went off so I decided to use the gas cooker here heating up the oil , added salt and the purƩe tomatoes.

Added thyme, curry, the onions and pepper to boil instead of dry frying into the oil.

Once the sauce is incorporated, I will gradually add the vegetableĀ

And will stir it into the sauce adding little water to help steam well.

And will allow to cook for just few more minutesĀ , leaving the vegetable not to over cook for more nutrition.

Vegetables šŸ„—Ā and fruitsĀ šŸŽĀ are what we need most times if we want to stay on a slim side because its packed mostly with fiber which keeps us light but filling, and cutting down our intake of carbs is the greatest good health of all.

This is a meal you can serve for lunch with some side fruits as appetizer or make it for early dinner 🄘 to enable everyone enjoy some dessertsĀ šŸØĀ before bed time. I was happy to have prepared and enjoy this lunch which you can too.
