Good and happy start to this new week and hope we are warmed up for all the good things ahead of us in wellness and abundance.

It rained  ☔️ all through this morning unexpectedly and as it continued to rain ☔️, with a cup of tea ☕️ in my hands I remembered this very recipe. “Tasty Paprika Red Rice”. 

Out of all my mom’s delicious recipe while she was alive, paprika red rice was always my favorite. She prepared it at least twice a week especially on a rainy day or when the weather becomes chilling. Its a dish with lots of fresh peppers, cherry tomatoes, some tomato puree and lots of spices with meat, chicken 🐔 or fish 🐟. But I have prepared this recipe in vegan 🌱 style garnished with cucumber 🥒 friends

Although its a staple in my country but you can enjoy this recipe cooked in different ways with different ingredients according to how you like it to taste. My mother usually will cook it by toasting the rice or smoking it a bit which is the signature to this recipe.

 Its a simple recipe that has been passed down for generations. That distinctive aroma of the toasting rice brings back memories of my mom anytime I prepare this recipe in the kitchen like I did this morning to share it with you all. It taste so delicious with the hotness heating the cold 🥶 weather.

Here I share with you the process of this recipe step by step.

INGREDIENTS:

250 g of per boiled rice (3 servings)
2 sachets puree
1 packet hot chili
1packet curry powder 
1 packet dry thyme herbs 🌿
4 fresh cherry tomatoes 
5 fresh hot peppers
1 large onions 
1 teaspoon of salt
1 teaspoon of margarine 
200 vegetable oil

STEPS FOR PREPARATION:

The first thing we will do is wash the rice thoroughly here above.

Then we set water to boil for soaking the rice to tender a bit.

We soak the rice once the water boils and cover it for at least 15 minutes.

We wash the tomatoes, pepper and onions, and slice them readily. As above.

Next  we will cut and dissolve the paste into a puree with little water here above .

 And here we add them into the blender adding some water.

And gradually blend above.

To fry the blended puree, we heat up the margarine, adding the vegetable oil as above

Here we add salt

And we add the blended puree above.

Once it starts to fry , we add the curry powder, thyme herbs 🌿 and the hot pepper powder as above

And we stir gradually to incorporate them into the sauce.

And we allow to fry and dry a bit here above.

Next we gradually pour the rice into a pot here above.

And take the fried paprika into the rice to mix incorporate the sauce with the rice.

We add just little water into the rice, stir gently and set it on the cooker covered, to cook properly.

And once the rice cooks, add some more paprika sauce and stir properly.

This dish is very much inspired by my mom’s recipe for a paprika recipe of testy red rice you will love to make not just on a rainy ☔️ day but for that traditionally way to enjoy rice more as a versatile meal in our homes.
