Its almost weekend in my region and am so delighted 😀 because who does not like weekends for resting and relaxing, especially how we enjoy making something special since we have time on our hands.

 My today’s recipe is a soup 🥣 for warming the soul. A minty spiced potatoes soup. One that came so handy as the week has been with rain ☔️. You can imagine how soothing and warming it is.

Soups generally are such a basic staple, whether its a potatoes 🥔 soup or others, although many of us find it hard or don’t realize how easy it is to make despite how cheap it is too.

A minty spiced soup on a rainy day or morning breakfast on weekends honestly is everything we look out for, knowing how healthy and good it helps our system. And the great thing being that we can make soups basically with any old vegetables we have in the refrigerator or pantry. Its all about bringing those ingredients together .

Here I share the process for this minty potatoes soup step by step.

INGREDIENTS:

1 medium size potatoes 
Bunch of mint leaves 🍃
1 medium cherry tomatoes 
2 yellow fresh spicy pepper 
Cloves of onions 
1/2 teaspoon of curry powder 
1/2 teaspoon of chili powder 
1/4 salt
10 ml of vegetable oil

STEPS FOR PREPARATION:

I will start the recipe by first peeling the potatoes, then cut into thinly squares .

Wash and keep readily here above.

Will wash the mint leaves 🍃, tomatoes 🍅, cloves of onions and the fresh yellow pepper, then cut slice each of them.

Here will set the potatoes on the cooker covering to boil.

Once it cooks half way will add the mint leaves 🍃 and the onions. Allow to cook properly to tender.

Stir together once the water has gone down, lower heat and allow to cool a bit.

Pour the potatoes into a bowl and into the blender adding the sliced tomatoes and yellow pepper

And will gradually blend into a puree above.

Take it into the pan to properly reheat the soup.

Adding salt, the curry powder and the chili powder above, stir properly together.

Here  will add the vegetable oil and allow to finally cook.

 Lower heat and serve.

How delicious and enjoyable. Even so great with the flavor from mint, making it a healthy soup you will love to try with your favorite spices.
