And I hope you all are enjoying the weekend, resting and treating yourselves to something special. Because weekends comes with great cuisines since we have little time on our hands. 

Today I will share with you a delicious and delightful lunch of carrots  🥕 tomatoes stir-fry pasta 🍝that is so easy and quick to bring to the table as an afternoon lunch for everyone. 

You can make this dish adding chicken 🍗, beef 🥩 or fish 🐠 but here I have made it in a vegan 🌱 healthy  recipe with lots of spices and flavors that left it with so much good taste .

.Easy and so tasty, you can make this lunch in your one version using the vegetable of your choice. Below are the step by step process 🍝

INGREDIENTS;

1 Pack of Golden Penny Pasta ( 4 serving)
1 large green bell pepper 
3 large carrots 🥕 
2 cherry tomatoes 
1 medium red onions 
1 hot red pepper 
10 ml of vegetable oil
1/2 teaspoon chili powder
1/2 teaspoon of salt
1 tablespoon of tomatoes paste 
1/2 teaspoon curry 
1/2 teaspoon thyme herb 🌿 

STEPS FOR PREPARATION:

The first thing we will do is clean, wash and chop the carrots .

We wash and slice - cut the green pepper, onions, tomatoes and red pepper readily

And we have the basic ingredients ready here.

We heat up the vegetable oil in a frying pan, add our onions to fry.

Once the onions caramelize, we add our chopped cherry tomatoes and stir the two.

Next we add our green bell pepper and red hot pepper.

Stir tenderly and fry to bring out aroma.

Then we add  the carrots and fry along.

We add the tomatoes 🍅 paste above and incorporate to give it color , add the chili pepper, curry , thyme and salt.

We add about 3 tablespoons of water for a little steam, stir and lower heat

To cook our pasta, we set water on the cooker cover for a quick boil .

Next, we break the strings of pasta into two (the way I like it)  readily

Once the water boils, we add our pasta, covering to cook for about 10 - 12 minutes to tender properly.

And once it cooks, we drain in a basket, take it into a pan pot, add our carrot spiced sauce.

Gently and gradually, we will incorporate the spiced carrot 🥕 tomatoes 🍅 sauce into the pasta with the cooker on to enable heat and frying. Then we serve.

 Pasta 🍝 is one very universal meal everyone loves, and we can make them in several recipes. Stir-fry is one recipe I love because you got to incorporate all the ingredients into the dish which allows us spice, flavors, color and aroma.

And my family loves it when its served hot. You got to enjoy it even better, asking for more . Serve it with chicken 🍗, beef 🥩 or fish, but with vegetables, its a whole lots of good health.
