Greetings vegan family and friends I know we are still in the celebration mood as 2024 keep counting down. In all, I love that we are in good energy anticipating a good end of this year despite all odds.
And still in the celebration 🎉 mood I made some special vegan delight for today . A delicious plantains lunch with tomatoes 🍅, green pepper, onions in fries and garnish.
Christmas season is times we feel and desire to eat varieties especially those that will leave memories.This very recipe I prepared to share with you is one of the recipes my mother use to like during festivals before she went to rest with the Lord.

I have however made it in another version I love 💕 because my mother loves her plantains roasted with some spices to enjoy it , adding red oil as a traditional meal. Roasting the plantains on fire will definitely give them some special taste she love, but I decided to boil the plantains in this recipe just the way I love it.
Here are the step by step for this vegan 🌱 love I share with you.
INGREDIENTS.


2 large half ripped plantains
2 large cherry tomatoes
2 long red chilies 🌶
1 large hot pepper
1 medium green pepper
1/2 teaspoon of curry powder
1/4 teaspoon of salt
1/4 black pepper
Few cent leaves 🍃
3 tablespoons of vegetable oil.

EXTRA INGREDIENTS
1/2 of a large onions
STEPS FOR PREPARATION:
Step 1.




The first thing to do is wash and slice the tomatoes, green pepper and the chilies 🌶

And will separate the frying one and garnishing one here above.
Step 2.


Will wash and slice the onions and cent leave as above.
Step 3.

The base ingredients are readily here.
Step 4.




Then will set to fry the spice as I heat the oil and fry the onions first to tender.
Step 5.


Will add the sliced tomatoes, green pepper and the chilies.


Stir to incorporate all.
Step 6.



Then will add the curry, black pepper and cent leave.

Stir and set it down after few seconds.
Step 7.



To boil the plantains, I will chop the two ends, peel off the back and put it into the pot.


Set the pot on the cooker adding enough water and salt .

then cover it up
Step 8.


Once it cooks I take it into the basket 🧺 to drain and cool before serving.




to serve I will cut open the plantains , adding the stir fries side by side.
Step 9.




Finally will stuff the plantains with the fresh veggies 🥗 for more healthy delight

A delightful lunch this Christmas season in a vegan 🌱 style. How beautiful this dish brought me so much memories of my mother. A loving memory indeed because this recipe is a special one.
