I remembered that I had some pineapple peels in the freezer—they were already washed when I put them away. I gathered the rest of the ingredients I needed to prepare my drink—one I’d had in mind for some time. The moment has arrived, the day is here; I have the ingredients and I’m in the right frame of mind—so, time to get to work!

Ingredients for approximately 1 liter:
- The peel of one pineapple, thoroughly washed.
- A piece of panela (or piloncillo), to taste, for sweetening. I used about one-eighth of a medium-sized piece.
- 1 passion fruit.
- 5 cups of filtered water.

Place the pineapple peels in a pot along with the piloncillo (unrefined cane sugar) and water. Once it begins to boil, turn off the heat and let it cool. I kept the pot covered throughout this process so that the aromas would become more concentrated.
I only uncovered the pot to take a photo 😉

Once the mixture had cooled, I proceeded to blend and strain it. Although the resulting liquid is truly delicious at this stage, I wanted to extract a bit more substance and flavor through the blending process.
Since my fine-mesh strainer is very small, I first used a larger one, followed by the smaller one.

I blended the passion fruit pulp with a bit of the pineapple-peel water I had already prepared, then strained and mixed everything together.
