Hello food lovers, warm greetings to all, I hope you are doing great and staying healthy. I am excited to be back here in this community of #foodiesbehive. Today, I made a coconut, banana, and carrot cake, a quick and easy option for a snack.

Este postre lo prepare para una ocasión especial, pues se trata del cumpleaños de una querida amiga🩷 y amante del coco, que le encantan mis postres, quise variar la receta y agregarle zanahoria y banana y me encantó el resultado, este torta la podemos hacer con harina de avena que le dará un sabor más saludable y delicioso. Aquí mi receta a mi estilo.

I made this dessert for a special occasion: the birthday of a dear friend 🩷 and coconut lover who adores my desserts. I wanted to vary the recipe and add carrot and banana, and I loved the result. This cake can be made with oat flour, which will give it a healthier and more delicious flavor. Here's my version of the recipe.

1 Banana
1 taza de zanahoria
1 taza de azúcar
75 grms de aceite
2 huevos
1 taza de coco rayado
1 taza de leche de coco
Polvo de hornear
Vainilla
2 tazas de harina de trigo

1 banana
1 cup of carrots
1 cup of sugar
75 grams of oil
2 eggs
1 cup of shredded coconut
1 cup of coconut milk
Baking powder
Vanilla
2 cups of wheat flour

1.- Primero Colocamos en un envase el aceite y azúcar, batimos muy bien hasta formar una mezcla blanquita. Vamos añadiendo los huevos uno a uno.

First, place the oil and sugar in a bowl and beat well until the mixture turns white. Add the eggs one by one.

2.- Luego añadimos la zanahoria rayada y el coco.

Then add the grated carrot and coconut.

3.- A continuación, agregamos la leche de coco y la harina de trigo y la banana triturada.

Next, add the coconut milk, wheat flour, and mashed banana.

Por último añadimos la vainilla, la canela, las pasitas y el polvo de hornear. Agregamos la mezcla en un molde engrasado y Horneamos por 45 minutos. Decoramos con puding de chocolate y coco rayado.

Finally, add the vanilla, cinnamon, raisins, and baking powder. Pour the mixture into a greased pan and bake for 45 minutes. Decorate with chocolate pudding and shredded coconut.
