Join me let's bake this "Healthy Honey Mango Oat Cake".

It's mango season and I have been creating recipes with honey, cutting down the intake of sugar. These recipes are mostly cakes and pancakes.
So, when I saw the main ingredient: "Honey" for the Qurator's Hive Top Chef's challenge, I remembered this healthy honey mango oat cake recipe I created recently and since it's mango season, why not? So you too can try it out.
It's my first participation in the Qurator's Hive's Top Chef challenge and I'm glad to share this special recipe with you in the Hive Food community, which I created with love.
Below are the ingredients and procedure. It's very easy to make.
Ingredients
Note:
Tsp- Teaspoon
Tbsp- Tablespoon

- 1 cup of rolled oats (leveled)
- 2 medium mangoes
- 1 tsp of baking powder
- ½ tsp of baking soda
- 2 eggs
- 1 tbsp of melted margarine (You can use butter)
- 1 tbsp of raisins
- ½ cup of milk
- 2 tbsps of pure honey
- 1tsp of vanilla flavour
Procedure

Blend the oats into oat flour. You don't need to sieve the flour.

Then add the raisins and blend again until it's completely mixed, then pour into a dry bowl.

Sieve the baking powder and baking soda into the oat and raisin mixture and mix well with a hand whisk.

Peel off the mangoes and cut the inner part.

Add honey and blend, then add to the blended oats and raisin mixture.

Add the melted margarine and gently mix with the hand whisk.

Break the eggs, whisk and add half of the whisked egg and mix gently and add the remaining and mix well.

Add milk and vanilla flavour and mix gently until well incorporated.

Prepare the loaf pans. Grease with butter or oil and dust with flour for easy removal.

Pour in the honey mango oat batter and bake in a moderately preheated oven.

I baked it for 25 minutes first, checked it with a dry tooth pick and then baked for another 20 minutes and that's 45 minutes altogether.
Now the healthy honey mango oat cake is ready.


This healthy honey mango oat cake is very soft, rich, delicious and irresistible. Those who tasted it confirmed it. It also melts in the mouth easily.
