Is there anyone who doesn't like Pancakes?
Hello Foodies! Let's make this delicious Milky Sweet Potato Pancakes.

On this day, I was craving pancakes for breakfast and I wanted to create something new. I remembered I had small flour and some sweet potatoes and I thought: "I can make pancakes with them." I had other ingredients available in the pantry, so, I began.
With a few ingredients, you too can make this pancake. It was my first time creating it and I was excited to create a new pancake recipe.
I will walk you through the process exactly how I carried out each step.
A non-stick pan is needed to avoid sticking and for easy flipping of the pancakes to the other side.
This post is inspired by the Qurator's Hive Top Chef's challenge with the topic: Pancakes.
Ingredients

- 1 leveled cup of mashed sweet potato
- 2 big eggs
- 1½ cups of milk
- 2 leveled cups + 1 tbsp of AP flour
- 1 tbsp of baking powder
- Cinnamon powder
- 2 tsps of vanilla flavour
- 1 tbsp of powdered milk + half cup of water
- Vegetable oil for greasing the pan
If you like sweet things, you can add about 2 tbsps of granulated sugar.

Preparation
I cooked the sweet potatoes and mashed them before I started taking photos and recording the process.
So, here are the steps to prepare this Milky Sweet Potato Pancakes.
Step 1: Cook the sweet potatoes until it is done. Drain the water and mash some of them until you get a leveled cup. It will take the shape of the cup.

Step 2: Pour the cup of mashed sweet potatoes into a dry bowl, with a whisk, separate it a bit, beat the eggs and add to the sweet potatoes and mix gently.


Step 3: I added 1 tsp of vanilla flavour into the milk and poured some quantity of the milk into the sweet potatoes and egg mixture and continued mixing. I used spatula to press the lumps to dissolve into the mixture and added more milk and mixed well.
Step 4: After adding the flour, baking powder and cinnamon powder, mix a bit and add the remaining milk and continue to mix until fully incorporated.

Step 5: I tasted the mixture and noticed the flavor wasn't flavoring, so, I added another 1 tsp of vanilla flavour. I also added the tablespoon of flour and continued mixing.

Step 6: At this point, I felt the mixture was still thick so I mixed 1 tbsp of powdered milk and half cup of water then added to the potato pancake batter and mixed gently with a hand whisk until it looked smooth and the consistency was okay for frying.

Step 7: Grease the hot non-stick frying pan and scoop the pancake batter and fry in batches until you are done frying all the batter.


When the bubbles form on the top of the pancakes, it means it is time to flip over for the other side to fry. Fry on low heat to avoid burning.
