Feliz inicio de semana para todos mis amigos veganos en todo el mundo 🌎, en la comunidad #plant power estamos de fiesta 🥳🎉 pues se cumplen 3 años de su fundación, y esto merece una celebración, pues, tal vez se diga fácil, pero, eso implica un largo camino de altos y bajos, retos que superar, por, eso quiero felicitar a todo el equipo que lo hace posible, en especial a la amiga @sirenahhipie, pidiendo a Dios Todopoderoso que le siga dando sabiduría y nuevos proyectos, además de mucha vida y salud para que siga por acá con nosotros por muuuuuchos años más 🙏

Por supuesto, toda celebración 🥳 necesita un rico pastel 🎂🎂🎂 para que esté completo, por eso nuestra amiga @sirenahhipie ha traído el concurso de hacer un # pastel 🎂 vegano, para completar esta celebración 🥳🥳

Estaba ansiosa por hacer mi entrada, de hecho, quería ser la primera, pero por razones de salud no pude hacer el pastel a tiempo y la amiga @josdelmi hizo la primera entrada con un rico pastel de chocolate y coco, bien hecho amiga 😊

Para mi entrada he preparado un pastel de avena, banana 🍌 y coco con relleno de manzana 🍎🍎 y maní, que quedó realmente delicioso 😋, mi familia y yo lo partimos en casa 🏡 deseando un feliz cumpleaños a esta grandiosa comunidad, dónde realmente me siento entre amigos, ha sido una gran experiencia desde que me inicié e la preparación de recetas veganas, he aprendido mucho, y siempre he tratado de dar lo mejor de mi 😊

A continuación les muestro el paso a paso de mi preparación:

Happy start of the week to all my vegan friends around the world 🌎, in the #plant power community we are celebrating 🥳🎉 because it is 3 years since its foundation, and this deserves a celebration, because, maybe it is said easy, but, that implies a long road of highs and lows, challenges to overcome, so I want to congratulate the whole team that makes it possible, especially the friend @sirenahhipie, asking Almighty God to continue giving her wisdom and new projects, plus lots of life and health to continue with us for many more years 🙏.

Of course, every celebration 🥳 needs a yummy cake 🎂🎂🎂🎂 to make it complete, that's why our friend @sirenahhipie has brought the contest of making a #vegan 🎂 cake, to complete this celebration 🥳🥳🥳.

I was eager to make my entry, in fact, I wanted to be the first one, but due to health reasons I couldn't make the cake on time and friend @josdelmi made the first entry with a rich chocolate coconut cake, well done friend 😊

For my entry I have prepared an oat, banana 🍌 and coconut cake with apple 🍎🍎 and peanut filling, which was really delicious 😋, my family and I split it at home 🏡 wishing a happy birthday to this great community, where I really feel among friends, it has been a great experience since I started preparing vegan recipes, I have learned a lot, and I have always tried to give the best of my 😊.

Below I show you the step by step of my preparation:

INGREDIENTES

1 taza de harina de avena
1 1/2 de azúcar
2 banana 🍌
2 manzana 🍎
Maní
1 huevo de lino
5 cucharadas de aceite
Canela

INGREDIENTS

1 cup oat flour
1 1/2 cups sugar
2 banana 🍌
2 apple 🍎
Peanuts
1 flax egg
5 tablespoons oil
Cinnamon

PREPARACIÓN

Primero se prepara el huevo de lino, para ello, se coloca en una taza 🍵 2 cucharadas de linaza y se añade 7 cucharadas de agua caliente, se revuelve y se deja en reposo unos 10 minutos.

Ahora hagamos el relleno de manzana 🍎, para ello, las lavamos bien, y cortamos en cubos, llevamos a cocinar con azúcar y canela unos 10 minutos hasta que espese.

PREPARATION

First prepare the flax egg, to do this, place in a cup 🍵 2 tablespoons of flaxseed and add 7 tablespoons of hot water, stir and let stand about 10 minutes.

Now let's make the apple filling 🍎, for this, we wash them well, and cut into cubes, we take to cook with sugar and cinnamon about 10 minutes until it thickens.

Con la ayuda de un tenedor 🍴 trituramos los cambures hasta formar un puré, añadimos el azúcar, aceite y vainilla, mezclamos, y luego añadimos el coco rallado y la harina de avena, hasta obtener una mezcla homogénea.

Separamos una tercera parte de la mezcla y reservamos.

With the help of a fork 🍴 mash the camburs to a puree, add the sugar, oil and vanilla, mix, then add the grated coconut and oat flour, until a homogeneous mixture is obtained.

Separate a third part of the mixture and set aside.

El lino que teníamos en reposo lo pasamos por un colador, y obtenemos el huevo, que vamos a incorporar a la mezcla de mayor cantidad.

Llevo la mezcla a una bandeja enharinada y luego coloco encima la manzana 🍎 cocina junto con el maní.

Luego coloco encima la mezcla que había reservado.

The flax that we had at rest we pass it through a strainer, and we obtain the egg, which we are going to incorporate to the mixture of greater quantity.

I take the mixture to a floured tray and then I place on top the apple 🍎 cooking along with the peanuts.

Then I place the reserved mixture on top.

Llevo la bandeja al horno a 180 grados por 30 minutos, dejo enfriar y desmolda.

I put the pan in the oven at 180 degrees for 30 minutes, let it cool and unmold it.

Finalmente esparci maní encima del pastel 🎂🎂🎉, cortamos en trozos y disfrutamos 😋.
