Beetroot pancakes are not just appealing to the eyes but are also packed with many great nutrients.
I love experimenting with fruits and veggies in the kitchen and today, i decided to incorporate beetroot to my child's lunch and see how it goes.
Beetroot is known for it's many health benefits and incorporating it to our day to day food ,is a good way to stay healthy and fit.

Here's how i made my beetroot pancake..

Ingredients needed

  • 1 and half cup of flour
  • half medium sized beetroot
  • 1 meduim sized onions
  • 1 tablespoon of red pepper flakes
  • 1 teaspoon of salt
  • 1 teaspoon of baking powder
  • half teaspoon of cinnamon powder
  • half cup of oil
  • 1 cup of water

How to make

Peel and grate the beetroot
I began by washing, peeling and grating the beetroot . Then set it aside.

slice the onions
Then i also washed and sliced the onions in bit and also set it aside in a clean plate.

Mix all the dry ingredients together

Now is time to mix all the dry ingredients together. I started by adding the baking powder and red pepper flake, then i went in with the cinnamon powder and salt.

Add the chop and grated ingredients

Then i add the grated beetroot and the chopped onions to the mixture.

Add the liquid ingredients
I added the 2 tablespoons of oil into the mixture and before adding half cup of water. Then i stir and made sure the ingredients are well combined. I also taste for salt and adjust a little.
The mixture wasn't thick but it is a little bit watery, just right for pancakes.

Grease the pan and fry the mixture one after the other

Now the mixture is ready and it's time to fry them.
I greased the pot with oil and then scoop some quantity of the mixture into the pan and allowed it to fry for some seconds before flipping to the other side.
I continued with this process untill i finished the entire mixture.

Now the beetroot pancake is ready. I sprinkled some dry pepper flakes and enjoyed.
I have to reserve some for my little princess, because she's going to love it when she returns from school.

The beetroot pancake came out great, i love every bit of it. Though it wasnt too sweet but it was nice , most especially it's healthy.
